healthy foods for road trip

im ovo lacto and will be in the car driving from oh to wa for 4 or so days besides homemade low fat bread/muffins,hummus/bean dip,chewy granola bars,hardboiled eggs and fruit/veg. are there any other good things to tak that wont spoil?ill only be able to have hard boiled eggs the first day b/c potential spoiling.
I'd skip the egg, and bring stuff that won;t spoil, stink, or harm animals. Some of my fam's road trip faves: jars of PB&J, bread, energy bars, tofu jerky, fresh & dried fruit, nuts, cookies, chips, and a cooler for the first day (leftovers from your fridge cleanup). And, of course: water.
There are the prepackaged Indian foods that you just have to heat up--I've never tried them, but I've heard people talk about them on podcasts. I don't know if you have a camping stove, but if you did you could use that to heat water, and then you could make instant rice (or heat up precooked rice in bags) or ramen noodles (nobody said you'd be eating fabulous cuisine! :)) Canned beans are always good. Clif bars are always a must for me. Oh, and fruit will travel fairly well, too, especially apples. Lots of water!
I always believe in covering all the bases of flavor on packing food for long drives. So pack something salty, sweet, savory, chewy, crunchy, soft and moist.
Salty would be things like nuts, crackers, pretzels, or popped popcorn.
Sweet would be things like cookies, dried fruit or candies.
Savory would be things like instant rice & beans, hummus or an oil & vinegar dressing.
Chewy would be things like fruit leathers, lara bars, or tofurky jerky.
Crunchy would be things like carrot sticks, celery sticks, or bell pepper slices.
Soft would be things like muffins, quick breads or sandwich bread.
Moist would be things like whole fruit, berries, or soup bowls that you just add hot water to.
If I was going to be in a car for 4 days, with only stops at gas stations / rest areas or 7-11 type stores I would bring:
In a bag or box
a loaf of Sliced Bread
Peanut Butter
Jelly (in a squeeze bottle for less mess!)
Scones
Muffins
Banana or Zuchini mini Loaves of bread
Crackers
Pita Bread
Canned Beans
Instant Rice
Noodle Bowls from Trader Joes (just add hot water)
Smooshed Fruit Leathers
Cookies
In a cooler:
Veggies cut into Sticks
Hummus
Chickpea salad
Berries
Grapes
In a plastic bag:
Plates - light and unbreakable
Bowls - half light and convenient and half microwave safe with lids
Cups - half light and convenient and half microwave safe with lids
Silverware
Ziploc style bags of various sizes
Hand towels / dish cloths instead of paper towels or paper napkins
Foil
Can opener
So breakfast is muffins / scones and berries. Snack is some crackers in hummus. Lunch is a PB&J Sandwich, Noodle bowl soup and grapes. Snack is veggies dipped in chickpea salad. Dinner is rice & beans. Get hot water and heat up the rice & beans by using a gas station microwave.
