Help Me Re-purpose Mushroom Gravy

I made mushroom gravy for Thanksgiving.  (I'm going to freeze it.)  However, I accidentally added red wine instead of white wine.  It's not going to work for Thanksgiving dinner, so I'll make another batch correctly.  I'm not sure what to do with the red wine mushroom gravy.  How can I use it?  Here's the recipe:

In a saucepan, melt:                               2 tablespoons butter

Stir in and cook until translucent:             1 onion, finely chopped
                                                            5 cloves garlic, minced

Add:                                                      12 ounces mushrooms (I used crimini)
                                                            1 teaspoon soy sauce

Increase heat to medium-high and cook until mixture stops steaming.

Add:                                                      1/2 cup dry white wine
                                                            1 tablespoon balsamic vinegar

Mix in a separate bowl, then add to pot:   1 cup vegetable broth
                                                            1-1/2 teaspoons corn starch

Bring to a boil  Simmer 2 minutes, or until reduced to desired consistency.

Make it the saucy base for a veggie pot pie!

I would keep it simple and use it to top some mashed potatoes, maybe the potatoes could have white pepper, garlic and sage added along with salt and some olive oil. I like to use my mixer to whip the potatoes.
Your gravy sounds really good.

okay so here is my initial reactions:

Salvage idea #1

if you make seitan, add some of the gravy to the mix to make the loaf more moist.

Salvage idea #2

add parma to the sauce along with some pureed white beans and a little vegan milk or creamer (just to thin it a bit).  Whiz it all together, heat it, and serve over broccoli and pasta as a make-shift alfredo-thing.

Salvage idea #3

Make a spaghetti sauce using a can of tomatoes and some tomato sauce/paste.  Add garlic, onions, italian seasoning, a 2-3 dashes chili powder, 1 dash cayenne, about 4 dashes cinnamon, and stir in 1/4-1/2 cup of your gravy and see what happens

Salvage idea #4

add a little milk to the gravy and use it as a cream of mushroom soup substitute in green bean casserole.

don't be afraid to get crazy, i mean, how often do you get to play with gravy??

My first thought was "eat it with a spoon."  But, I know most people don't share my affections for condiments.  So, ummm, I'll go with the pot pie idea....

Great ideas.  I'll be having gravy on mashed potatoes at Thanksgiving, so I made a serving of green bean casserole.  Yummers!  I'm saving the rest for a pot pie.  I need to buy a small pie dish for it.

You could also use some as a topping for steamed veggies.

Me too. I don't see how using red instead of white wine ruins it for gravy purposes. Unless your red was sweet, or something.

Water it down with a good strong broth and eat it as soup. Of course.  ;)b

AND BTW, thanks for sharing a recipe for mushroom gravy that doesn't contain NY which I can't get here anyway.

drools.... those ideas make me want to go home and make gravy, just so i have gravy for the salvage recipe ideas...

I ate some of it with a spoon and the rest went on a bag of frozen mixed veggies (corn, peas, and something else).  It's really good.  I had two bowls of it at lunch today.  I think I might start messing up mushroom gravy more regularly.
