Homecoming dance dinner

I'm new here, I found this site while searching for vegan recipes.  My son and his girlfriend are going to the Homecoming Dance, instead of going to a restaurant before the dance he asked if I would cook for them.  She's vegan and everytime they go out to eat she's pretty much stuck to salads... and he wants the night to be special with a special prepared meal.  I've searched through the recipes and I'm not sure which one would be considered "elegant".

I'm hoping for some suggestions.

i agree with baypuppy, try asking her what kind of stuff he likes to eat and basing your dinner off of that. you can make most things vegan. if you need help you can just post here again and we could let you know what we think. good luck.

I've seen tofu before  ::)  that's about all I know... I didn't even know what vegan was until about a month ago when I tried to give her a brownie with ice cream on top of it  8)

I'll have him get some ideas tonight.  If all else fails I can make that shepard's pie recipe, just make 2 little individual servings in those little ceramic pasty dishes and a few of the veggie recipes.  I do want to make a dessert, I'll have to search for a recipe too.

How awesome are you to be making a special dinner for them.  Thats so wonderful of you.  Good job!  Elegant now that takes some thinking.  This requires the good china & flatware.  Perhaps even some sparkling cider in crystal.

If I wanted an elegant dinner this is what I would do:

Start with a salad of mixed baby greens, tiny multi colored grape tomatoes, cucumber slices (no seeds or skin), radish slices, kalmata olives and a light Italian dressing.

Soft bread sticks or rolls with an herbed oil for dipping.  Though that could get messy so perhaps just pats of Earth Balance Margarine available.

A lovely portobello wellington with a delicately roasted fingerling potatoes & tiny veggies would be lovely. 

Finish with a light fruit sorbet.

You could also use a mushroom risotto for the main dish, with green beans sauted in Earth Balance with almond slivers.  If you are feeling adventurous you could even try Tofu!  I would pair that with either a rice pilaf or roasted potatoes.

I would avoid giving them anything too strong, garlicky, or heavy.  They will want to be close and dancing afterwards not worrying about bad breath.  heh  Oh last bit of advice, something I would do personally, serve them by themselves rather than eating with them.  Make it a nice setting with lovely linens and a nice table setting.  That would make it seem almost like they are being treated to a nice fancy meal without the family even at home.

Jeez, Cali! :o Nice suggestions! So detailed! And I agree that this is so nice of you, peachgal, to want to put forth such effort to make it a special night for your son & his girlfriend! I hope she really appreciates how sweet that is--and rare! :D Good luck, and please let us know how it goes!

I'd planned on the fancy china, tablecloth, sparkling cider... but I do have one question if I may.  I hope this doesn't sound silly but I have to ask.. what about candles??  Would candles be offensive to her?  They're made with bees wax, or most of them are right?

Thanks JessCita.  I was just detailing what I would do for either my hubby and I or for my daughter (should she bring a date home)! 

Most everything can be easily purchased from the main menu I listed.  Even tiny zucchini & patty pan squashes are becoming available in regular grocery stores.  The sorbet could be a lovely name brand from the cooler case.  If you put things in nice dishes to serve it looks 100% fancier! hahah  I have even found bakery rolls that are vegan.  "Classic Dinner Rolls" at my local Stop & Shop are great.

Though personally, if this was for me, I would be making tiny radish roses for the salad.  I am just silly like that though!

hhmm, Yeah, I sometimes forget there are people who dislike mushrooms, though I dont know how thats possible.  haha!

I would go with the candles.  Even if she is not a fan of them personally she should appreciate the sentiment and effort you are putting into it!  Make sure they are unscented though.

May be too late since the dance is probably tomorrow, but i think a stuffed acorn squash would be classy and seasonal. You could serve a side of carrots roasted with maple syrup and cinnamon - things that I think teenagers would like 'cause they're sweet!
