i need recipe ideas!

ok, so the other day i went to the farmers market and bought a ton of vegetables and forgot that i am leaving town for a week in 2 days. i am a big believer in 'waste not want not' and i get serious guilt complexes when i throw food out (i think it was the whole starving kids in china thing my mom used to use on me as a kid). i am probably just going to make a big pot of soup but thought i'd try to get some other ideas.
i have:
1 head cabbage
3 zucchini
2 tomatoes
2 onions
2 carrots
2 leeks
several small red potatoes
with the cabbage and potatoes make colcann (I think I'm writing it wrong) potato and cabbage patties.
With the zucchini and the rest make a minestrone, some kind of stuffed zucchini with bread crumbs, or stuffed tomatoes.

You could make a leek and potato soup which is callled a vichyssoise
And for the rest just grill'em
If you have tofu or seitan or something you can make a stir-fry.
I just made this shepherd's pie last nighthttp://vegweb.com/index.php?topic=7450--you can use up the cabbage, zucchini, onion, carrots, and potatoes with this recipe. I didn't have the mushrooms it called for, so I just made a different gravy.
You can use the tomatoes on a salad or just eat them plain if you want. As far as the leeks, I've never cooked with them, so I can't help you there.

roast red potatoes w/ dried herbs, olive oil, garlic, onion, dill! :P
i love zucchini and summer squash baked in the toaster oven...so easy.
slice into rounds, sprinkle w/ garlic and onion powders, basil, parsley,oregano, nut. yeast, s and p... top w/ (veg'n?) cheddar cheese and bread crumbs. heat until cheese is melted. soooo good.
you can also just saute the same ingredients until zucc is soft.
you can always freeze what you don't use and make veggie stock later.
freezing! doy. i totally didn't even think of that.
i ended up making the biggest pot of vegetable soup ever in the history of the world.
