Indian food - What's your favorite dal recipe?

My Indian friend made the most amazing dal for me. She doesn't measure anything, or even label her bulk of Indian spices. So I had a difficult time following her recipe when I watched her make it. And now I want dal.
Do you have a favorite recipe for dal (with measurements) you could share?

First of all let me make it clear that "INDIAN FOOD" is a very very broad term.
The cusine of one state of India is as different from another as a Japanese is different from Englishman.
Generally when People say Indian food, they invariably mean North Indian /Punjabi food.
So I need to varify what DAL you had in your friend's house.
You need to find out from her if she made Tadka dal, Bevadi, Trevati, Panch Ratan, Channa dal, Tuvar dal, Urid Dal, Ma Ki Dal, Masoor Dal, Moong Dal, Sambar, Kozambu or what?

There a gazillion ways to make dal....which I think simply means "beans", when I was in India last year in the north, it was eaten with practically every meal. I had it in private homes too, and no one made it the same way. I think people just throw together what they personally like.

No. Generally there are certain rules that each Dal is prepared even in North India.
What you had was probably Tadka Dal.
Tadka dal is prepared using Toor Dal.
Toor Dal in Gujarat is totally different from what is made in North India.

I stand corrected. You yourself mentioned 12 dals in your post, so a "gazillion" is a bit of a stretch I suppose. LOL
I did think that no two dals tasted or looked alike while I was there, but there were probably all variations of the same basic ingredients.
When I say I like "toor dal", it's a recipe in the Indian Vegan Kitchen that I use. She calls it "toor dal" which I realise is really the bean itself.

It's so simple and delicious. Right now where I live sweet potatoes are unavailable, and while you can substitute butternut squash, it just isn't quite the same. I make no claims for its authenticity or lack thereof, but it certainly satisfies all my cravings!! I can't wait for fall--for cool weather and for sweet potatoes to make this with!!

I realised I had spinach in the house for once so of course I started jonesing so bad for this dish I dashed right out in the kitchen and made a pot! Deeelicious!

I don't know the name of the dahl dish my friend made. It is made with yellow lentils, fresh chopped tomatoes and onion, ginger, chile, cumin coriander and a few other spices.

It looks like it was "TADKA DAL".
You may try my Bevadi Dal recipe for even a single lentil.

Have you tried URID DAL and VAL DAL?
