Latest beany efforts

1 can pinto beans, mashed or not, but drained for sure
1-1/2 c. cooked quinoa
sweet pickle relish AND chipotle salsa to your tastes
enough vegan mayo to make it stick together.

this is sweet, tangy and spicy all at once.  Plus, I think you could use any cooked grain with any old can of beans.  I just wanted to use some pintos, but black beans would be lovely too.

mmm going to finish up eating this!

That sounds very tasty!  I really like bean salads.  I'm going to have to try that. 

Oh, here's another bean recipe for you.  I got this recipe for Red Kidney Bean Dip from the Food Network's Nigella Lawson.  I haven't tried this yet, but I'm hoping to soon.  This dip looks really simple, tasty, and different.  I'd probably dip toasted pita chips in it.  Here's a link:
