Menu critique and/or ideas and/or suggestions
I feel so Iron Chef here... Okay, so this Sunday I'm cooking a dinner for my wife's grandma, her aunt and two cousins. The hook, is I'm helping them use up vegetables they get delivered to them from an organic local farm, and the veggies my wife has grown. I'm keeping purchased items to a minimum. What they have a lot of is cantaloupe, acorn squash, onions (red and yellow), Japanese eggplant (at least I think that's what the long skinny kind are), and we bring a ton of tomatoes to the table.
My plan:
Banana Stuffed Acorn Squash(es)
Baked Eggplant with Miso-Tahini sauce (you can see the recipe for that in this thread)
Plus a salad to use ups some other odds-n-ends veggies. I'm thinking the miso sauce will be a nice counter to all the sweet in the meal, but the lemon juice would kind of bind it together...
Thoughts? Critiques? Tips on good baked breaded eggplant?

It is a high quality newsletter nonetheless. Manufactured with the legendary Red Swingline stapler. Far better than the Boston. I was told it was acceptable for newsletter assembly use even though that's not technically work related. As long as I do it during my break and keep the noise at a reasonable volume.

o_O banana stuffed acorn squash? melon/tomato gazpacho? Now that's something you won't find pre-made at a regular grocery store. Sounds pretty creative!
The only thing I'd change is the miso for the eggplant. I'd do a sweet miso sauce instead of miso-tahini. It's a pretty typical way of serving japanese eggplants (the japanese are skinny/small and dark purple, the chinese are skinny and bright purple). Oh, and it's tasty.

Oooo... that looks tasty. If I wasn't lacking several of the ingredients, I'd be all over it. Maybe I could sweeten up the other sauce a bit though. I'm starting to doubt whether the sweet vs. tangy combo is the way to go.
Admittedly I do have konbu dashi (stock), but I always replace sake and mirin with veg broth plus a teency bit of vinegar... I'm too young to buy!

I meant to post results sooner, but work has been insane this week... oi vey.
So:
Aside from the oven at great-grandma's not working, everything was great!
Try the gazpacho - now people!
The microwave did a good job on the squash (that banana filling works great - be generous with your cinnamon!) , but left the eggplant a little soggy. Didn't keep people form eating, though!
And the sauce? Wasn't the perfect fit, but it did the job.
Clean plates and 8 full bellies. :)
