Need Sweet Potatoe Help!!

Hey there.
I am making a vegan supper tonight for a bunch of my friends. To try and keep it simple, Im making homemade veggie burgers and sweet potato fries.
My brother is a great cook, and he advised me to boil my sweet potatoes until they are tender but not fully cooked, let them sit in the fridge, then slice them into stripes, coat them in the seasonings, dip them in flour in the fry them in a pan of oil.
Now, since Im making such a huge batch, would it be possibly to fry them, then heat them up later by baking them for a few minutes? Im worried they will end up during mushy or burn to much if I bake them. Any advice would be greatly appreciated!!

I wish I could help. I don't make sweet potato fries. But I love BAKED sweet potatoes and nothing could be simpler than that! (or healthier)
I agree, they do tend to shrivel, so I'd cut them into large wedges - I also bake mine, never fry.

You wouldn't have to use the spices in the recipe, but you could use the cook times, temps, and quantities of ingredients as a guideline.
I don't know what your sweet potatos are like there, but if I par-boil them here they come out mushy. Just chop and fry in olive oil, and drain well on paper towels. Sprinkle with garlic salt fresh out of the pan. I don't even peel them, the peels crisp up nicely.
