Nutritional Yeast Victory!!!
When I first joined VegWeb last November, my first post was about how I was afraid that I would never get used to not eating cheese & how I even had a hard time making substitutes because I hated nutritional yeast... It was stinky and grainy and just UGH.
However, I had a sneaking suspicion that the stuff I bought at the organic foods store by my college was just a bad batch. Well, now I'm moved back home into the big city :), and I just bought some nutritional yeast here the other day, and YUM!!! My boyfriend & I used some to make tofu-ricotta "cheese" to put on top of pizza the other night, and I started with literally 1/4 of a teaspoon (when the recipe called for 1/4 cup!) because I was so afraid of what it would taste like... The last batch I bought had tasted like a foot! (Or what I imagine a foot would taste like...) This tasted amazing!
I think the main problem was that the old health foods store kept their N.Y. in the regular bulk foods section, and my old faithful one here at home keeps it in the refrigerated bulk section! Does it always have to be refrigerated?? I think I'll be keeping mine there just in case... Also, the new stuff is N.Y. flakes, whereas the old stuff wasn't.
Wow wow wow. I just sprinkled a good tablespoon on top of my spaghetti for dinner in place of parmesean, and I am IN LOVE! I am SO EXCITED that I finally like nutritional yeast! Yay! I can't wait to start making more recipes with it! I've saved so many to my recipe box over the last several months, but I've been afraid to try because every time I did, it was rancid... Now I have the good stuff & I couldn't be happier! :D
congrats! I've never heard of refrigerating NY... maybe I should do the same with mine. I like the flavour of it, but you seem VERY excited, so putting it in the fridge might make it that much better!
What is nutritional yeast please? And can it be obtained in the UK?
I did what I should have done - googled it! It is available in the UK and I am going to try it! ::)
Maybe I will try it again. I didn't care for it but I guess it deserves a second chance. Esp. since its so healthy, I can always sneak it into things

Are you sure you weren't buying Brewer's yeast instead of NY? I get it (NY) all the time out of unrefrigerated bulk bins and have never had a problem with the taste.

Yes, I am positive. I actually bought the old stuff on several occasions, hoping it was perhaps a different batch from the first one I bought--but it all tasted & smelled disgusting to me. I don't know if my new grocery store just has a different bulk brand or what, but it tastes SO much better. It's not my new favorite food or anything, but I really like it a lot! (Especially way more than I did at first.)

Nutritional yeast is a yeast that is fermented in a cane and/or nutrient-supplemented beet molasses solution before being pasteurized, dried, and pressed into powder or flakes. It's high in B-complex vitamins and a lot of brands add B12. You're sure to be able to find it in the UK.
It's not to be confused with Brewers Yeast (it's bitter) or Active Dry Yeast (the stuff bakers use).

Hey JessaCita! Did you find any good nutritional yeast recipes? I FINALLY, FINALLY found some locally, so I am sitting here with it next to my laptop, dying to try it out! Funny how when I don't have any, it seems to pop up in many recipes, but now that I've got some, I can't find a nice sounding recipe that uses nutritional yeast!
So, whats a staple with you, or with anyone for that matter?
And before you suggest it, I would totally try Dragonfly's Bulk Uncheese mix, but I can't get cashews and arrowroot powder until tomorrow. Any other suggestions?

I always find several recipes using a new ingredient, and then once I actually find the ingredient, discover that all the recipes using it vanished into thin air. I hate that. Anyway... do you have VWAV?

It is such an amazing nacho cheeze dip, goes great on tacos or in enchiladas... I am at work, but I'll be back with more later! Yay, nutritional yeast! I never thought I could even stomach it, and now I'm addicted!

when i think of nutritional yeast, i immediately think of the tofu scramble from VWAV. TKitty, I hope I'm not stealing your thunder, but n.y. and tofu scram go hand-in-hand in my world and its tastiness in that recipe must be noted!
Actually, QBee, I hadn't even thought of that one... I was thinking the tofu ricotta and the pasta alfreda, and of course the punk rock chickpea gravy! But the scramble is really good, too.

I haven't tried the pasta alfreda yet (I think I will tonight, actually... Hmmm), but the tofu ricotta is the recipe that inspired me to start this post. It is SO GOOD! I always add some Italian herbs, along with fresh basil to it, and it is mmm-mmmm good! :D
Daaaaaamn! As planned, I made the Fettuccine Alfreda tonight, and I do not like it at all! Usually I dink around with recipes, but tonight I didn't because I just expected it to be perfect! It's not terrible, but it's just kind of...blah. I am still eating a little portion because I hate wasting food, but I don't think I'll make it again. :'(
Totally unrelated to nutritional yeast, but I am eating a Chik'n Caesar Salad that I am absolutely addicted to as of late... The chik'n is Health is Wealth brand , and the "Caesar" is by Dreena Burton, from her new "Eat, Drink & Be Vegan" book! The only thing I change is to add only 1 Tbsp. of lemon juice; it's way too acidic with the full 3. Seriously amazing. I almost feel like I'm eating too many (yeah, right ::)) veggies because all I crave/want is this salad! :D

Oh, no! I was glad for the recommendation because I kept meaning to make it... I'm not sure if I did something wrong. Maybe I burnt the pine nuts? I don't think so, though... ??? Perhaps I will try again, just because I hate "failing" with recipes! ;)
