I am going to an impromtu family reunion today. The instructions are to bring a tritip and a side dish to share with all. So I let my mom take care of the tritip part. I myself am bringing vegan boca burgers. As for the side dish, I am making a vegan macaroni salad. I don’t plan on telling anyone it is vegan. Let’s see if it can fool the masses (he he). I just had a bite and it should unless my mom goes running around telling everyone it is vegan. Anyway, here is the recipe:
24 ounce bag small elbo macaroni 1 small jar sweet relish 1 cup vegenaise 1 tbsp mustard 2 stalks celery 1 yellow onion 1 can whole black olives 1 teaspoon salt Bring water to a boil in a large pot. Add macaroni noodles and cook for 10 minutes, or until tender. Drain and rinse a couple of times with cold water. Chop up onion, celery and olives and put in a large bowl. Add relish, noodles, vegenaise, mustard and salt. Mix together and let chill for a couple of hours.
I like black olives but I don't think of them as being in a traditional macaroni salad
