Too much salt!!!

I've noticed that alot of these recipes call for a fair amount of salt. I understand it does add a certain flavor and all, but what about people that can't have it in thier diet?
Can anyone suggest a good alternative for salt that will give the recipe that same "umph"?
My Papaw always used the "fake salt" kind of like fake sugar because of his health problems.
Depends on the recipe. If its baking, don't try to cut it out. Anything else, I usually just reduce the amount, or take it out all together & then add extra of the other spices called for. Mrs. Dash is always good too.
If you're used to little or no salt, reduce or eliminate as necessary. I too used to get very ill from eating prepared foods when I would return to the States...everything had soooo much more salt than we use here!
You can use white wine in some dishes like casseroles, for part of the liquid. It has natural non-sodium mineral salts (potassium chloride for one) that will help the "bland" flavour of anything cooked with a sauce etc. Alchohol evaporates at a lower temperature than water boils, so if you bring your ingredients to a boil or put it in the oven for say an hour, you don't have to worry about alcohol in your food.
I do personally reduce the salt in the recipes I take from VW, because I am used to little or no salt in my cooking. It doesn't affect the flavour, especially if you don't actually like "too much" salt.
Perhaps a seasoning like Mrs.Dash could be useful. As was said already though, you can adjust recipes with cooking, but not with baking. I don't normally add salt to things much myself, because I am not a salty food person, but baking you HAVE to be exact with.

I second Mrs. Dash, or adding some heat. As an extra bonus, Mrs. Dash is awesome on steamed squash.

Sorry, that post got away from me.
I meant to say, there are now 3 different Herbamares, at least here in Europe. The traditional (green box) blend of sea salt, potassium chloride and herbs, but also the blue box (no sodium chloride) and the new "spicy" blend...something for everyone. I think "spicy" means "a little bit of black, white and red pepper".
