using lentils or other fillers instead of tofu in baking

I was watching the food network and a guy was doing a show on lentils. He used red lentils in one recipe for making cookies.
I am making a pumpkin pie today for Thanksgiving and I am going to try putting red lentil puree in instead of tofu.
Has anyone ever tried this?
Just thought I'd ask before jumping in and possibly ruining it!

Never tried it, but I'd think you'd need to increase the cornstarch or whatever to help it bind.
Not sure though. Let us know how it goes!
Lentil puree is great in baked goods.
I used to live in Moscow, Idaho, in the Palouse region, which considers itself the lentil capital of the world (I find this hard to believe, but maybe the US!) They have a lentil festival annually and some very interesting lentil recipes show up every year! Everything from the usual stews and stuffings to lentil bread to lentil ice cream.
I use lentils as the filling of stuffed peppers and as the basis for sloppy Joes. Mmm.
Lentil ice cream... now this I'm highly interested in. How was it?
I think "interesting" is usually the consensus... but it's usually presented by the Chamber of Commerce, specifically to demonstrate lentil versatility. :)
Yeah, if they can pull ice cream off, I'd have to agree that lentils are versatile. Next Iron Chef contest, someone has to make lentil ice cream! Please?
i love lentils. and the pumpkin pie idea does sound pretty good.
Yeah, I'd totally try a lentil pumpkin pie.
I've baked cookies with cannellini beans (Northern or white beans). I couldn't even tell there were beans in my cookies.
Let us know how the pureed lentils work out for you. I've never tried this substitute before in baking and am curious now.
You don't need to put tofu in there. I've seen vegan pumpkin pies without using tofu.
today on oprah, jerry seinfeld's wifey was on... she has a cookbook called "deceptively deliciious"... it is all about hiding veggies in your kids food by using purees. i need it. for me. i hate cauliflower. :-X
but she used whole chickpeas in one of her cookies, and veggie purees in her brownies. it looks like a good idea. im going to pick up the book and investigate some of the recipes. though they arent vegan, im assuming the purees can take the place of the eggs.
im intrigued as well by the lentil puree!
