Vegan recipes.

I am going to be cooking for about four bands coming through tomorrow, and two members of one band are Vegan.

What are some quick and simple recipes that I could make for them?

I'm not vegan or vegetarian, but when I cook meatless meals it's probably not the same thing a bunch of 20 something boys are looking to eat.

what I'd do is make a big spread of hummus, veggies, pita - finger foods etc.

but that's just because I'm not much of a cook - I wish I were!

Touring bands need NOURISHING meals! Pita w/ hummus is a great idea (tomato, cucumber, lettuce, onion, tahini sauce, avocao, etc). Get them some whole grain teff or quinoa or whole grain pasta of some sort. Just think of things that are really easy to make in quantity. A soup would be wonderful (lentil, minestrone, miso)

That is really awesome that you're helping these dudes out. The band members will probalby be more than happy to assist you (and will most likely ask to help you in preparation!) since you're helping them out.

Spaghetti is a really easy thing to veganize and is great for a large crowd. And vegan spaghetti wouldn't be too weird for non-vegans, so everyone could eat the same thing. Like secondbase said, whole wheat pasta would be perfect, and you could make a huge salad and a loaf of garlic bread with Earth Balance.

You beat me to it! Great idea for a large grope--familiar, inexpensive and tasty! Just check all ingridents to assure that it is vegan!

mexican food might be good too..
you could put together a spread of vegan tortillas, veggies, beans, salsa, guacamole, etc... and everyone could fix it as they like. you can use a combo of beans and faux meats, and my FAVE!: taco seasoned tofu.

also, veggie scrambles...scrambled tofu w/ any kind of veggies.

spaghetti with veggie meat sauce

veggie hamburgers and french fries with corn on the cob

veggie chili with cornbread or breadsticks

a pasta salad with a vinaigrette and veggie pepperoni, cherry tomatoes, chopped up red onions
and chopped up black olives. Serve it with breadsticks.

veggie hotdogs with sauerkraut and relish served with coleslaw

I made "Tuna" Mushroom Casserole tonight.  I'm not sure how fast you consider fast.  It took about 35 minutes to make (including oven time) and it's creamy.  If you make it, add another can of garbanzo beans.  Soy milk and vegan margarine are the only two "vegan" ingredients, but the butter is for sauteing, so you could substitute with olive oil.  It would make a "stick-to-your-ribs" meal they probably haven't had in a while if trying to find vegan food on tour.

Edit:  I'm not sure if you're going to be there when the food is being catered.  If you make something, it would be good to have a copy of the recipe with you or by the vegan food, so the vegans can see there are no animal products in the meal.  I don't trust omnis to recognize all non-vegan ingredients.  If I was them, I'd be suspicious of all dishes until I verified the ingredients.

i used to set up shows in my house and i would always always always have food for them and everyone that came to the show.  but i think the food that went over the best was pizza.  you can find vegan pizza crust at the store, i think pillsbury dough is sometimes vegan.  make sure none of the ingredients are casein, milk, milk fat, whey... things like that.  then just top it with a can of tomato sauce and veggies.  dont worry about finding vegan cheese.  i always felt that its better to make 3 or 4 giant cheeseless pizzas for the price of 1 or 2 cheesy vegan pizzas.

the best part was that i didnt have a million plates to wash the next morning.

what bands are playing???  is this a house show?

We're doing it in a new venue, and the bands are Kiros, Benefit of a Doubt, Future's past, and Sons and Lovers.

A few other girls are making things, but I'm making spring rolls, and some other with shrimp, since it was requested.
Home made hummus, a big garden salad with Olive Oil and Balsamic/or white vinegar dressing, Pita chips  for the hummus, Stuffed whole wheat shells with spinach, zucchini, broccoli, and others with some cottage cheese .

I think I've got it.

I'm sweating in my kitchen.
