Vegan Toad in a Hole

Can anyone come up with some vegan versions of this for me??
I used to eat it when I was a kid. I think it's called quite a few different things.
(I'm talking about the American Toad in a Hole BTW, not the Brit's Sausages in Pudding)
Recipe:
TOAD IN THE HOLE
1 egg
1 slice bread
3 tbsp. butter
Cut a circle out of the center of the bread. Fry bread in butter until brown and crisp on one side. Turn it over and break and egg into the circle. Fry over low heat about 5 minutes or until the egg is cooked. Serves 1.
The non-vegan way is so simple, but I have a feeling I'd have to bake some vegan tofu eggs and eat them with toast to even get close at all.
Any ideas??
Hmmm....I like puzzles.
So how about this: get canned half peaches, and slice one in halves or thirds (so that you have three circular "yolks."
And then what if you poured a little tofu into a cup and mixed in some slight flavor, like a splash of agave and cinnamon.
Then I'd put the holed-out-bread in the pan, a the peach in the middle, pour the tofu around it (to bind the bread and peach). Fry for a couple of minutes, then veeerrrrry varefully flip over.
For a savory version, braggs in the tofu, and a thick yellow tomato slice for the "yolk."
Use this recipe for the 'egg' portion. Cooked separately unfortunately. Then make some Fronch Toast from VWaV using the same size cutter to make the egg 'hole'. Put together and enjoy! You could probably slip the tofu egg in when the Fronch Toast is almost done cooking.
