veganizing a recipe

I used to love mango chicken. I ordered some last night made with tofu and fell in love again. I found this recipe that sounds close but I have not had much luck figuring out how to cook tofu that I like it. Any help on technique to make this work would be greatly appreciated.

Check the Vegan Cooking FAQ thread for how to press your tofu. Use firm or extra-firm and press it before cutting it up. I would toss it with some of the seasonings about 20 min before you want it, so it picks up some of the flavours. Mix together your "sauce" ingredients (except the thickener) and toss your tofu bites in that and let it rest about 20 miin or more before frying it as your "chicken." You could reserve part of the sauce and then proceed as per the recipe.
Also, freeze the tofu! Freezing it changes the texture and it's so much better like that.
use this for the chicken part: extra firm tofu, drained and pressed (i use a tofu press)... cut the tofu in cubes, shake the cubes in a ziplock with like 1/4 cup cornstarch, fry the tofu in some oil until golden and crispy on all sides... do it :)

hmmmm ya some good "chicken-y" seitan would be legit... if only i worked at native foods and could steal their "chicken'y" setian recipe...
