Even though our calendar says it's officially Spring, the dreary weather near VegWeb HQ tells us otherwise. It's cold, rainy, and major yuck! All I want to do is crawl into bed with a big mug of vegan hot cocoa, and read books for days. Or maybe get a killer massage while laying on the beach in Hawaii? Yeah, that sounds even better! I finally learned to make curries, and am in love with the delightful Panang curry with mock duck. I dream of it sometimes, it's super-delicious and wildly addictive! : )

I could really use some of this bath stuff to slather on my pregnant body :)  Just sayin.

I love the Moong Dal from RHIW - it's probably my favorite curry type dish - not really a curry, but it's my fave.

Definitely, definitely Thai Curry Soup.

Though I have a pumpkin daal recipe that calls for Thai curry paste and it's DELICIOUS.

I actually haven't had much luck with curry... but I'm not sure if it is personal preference or if I just need to expand my horizons and keep trying new dishes. I've done this in the past with foods (both tofu and tempeh for example) and found that sometimes it's all in the way it is cooked. So I'll be reading through this thread looking for ideas I suppose! Maybe I'll learn to  :)>>> curry as well

Mmmm, my favorite is a panang curry with eggplant... lots and lots of soft, delicious, been-cooking-for-a-really-long-time eggplant!

My favorite curry: Thai green curry tofu.  I like it with eggplant and zucchini, and medium spicy.  I get this every time we go out for Thai food.
I'd love to dabble in a bit more Indian cooking, though.
