Amys Vegetarian Sloppy Joes

What you need: 

1/2 lb tofu
1 6 oz can tomato paste
2 tablespoon ketchup
1 tablespoon rice wine vinegar
1 small onion, chopped
1 med. tomato, chopped
1 small jar sliced mushrooms
2 tablespoon Dijon mustard
salt & pepper, chili powder, oregano to taste
1 tablespoon molasses

What you do: 

Heat olive oil in saucepan and add molasses. Crumble in tofu & brown, stirring to prevent burning. Add tomato paste & mix, adding water if necessary. Stir in mustard, onions and tomatoes. Add oregano and chili powder to taste and continue mixing and heating. Stir in mushrooms, ketchup & vinegar. Season with salt & pepper to taste. Serve on toasted sandwich buns or in tortillas or pitas.

SO HOW'D IT GO?

Great! Did add green pepper, besides that followed recipe as written. Will make again and again.

Ok, so I deviated from this recipe quite a bit..but my version came out so fabulous and sloppy joe-tasting! I cook with tofu a lot, but for some reason this time it stuck horribly to the pan (I chopped it up instead of "crumbling"). I didn't add any molasses..so maybe that would have helped it not to stick? My tofu also didn't brown (except the burned stuck pieces). I added onion and mushroom, no tomato paste, lots of ketchup, vinegar, no tomatoes, regular mustard, some bbq sauce, and a little soy sauce. I added the recommended spices (just poured some in), and also added a little cayenne pepper. I think a better way to do the tofu would be to do it as regular (cubes), and then chop it after it's browned. In spite of what seemed like a disaster..this came out VERY tasty! : )
