Red Lentil Hummus

What you need: 

1 cup red lentils
1 1/2 cups cold water
2 tablespoons olive oil
3 tablespoons other oil (ie flax, hemp)
1/4 cup lemon juice (juice of about 1/2 a lemon)
1-2 cloves garlic, minced
1 teaspoon ground cumin
1/4 teaspoon salt

What you do: 

Place lentils and water in a pot and bring to a boil, then reduce heat and let simmer 2-3 minutes. Remove from heat, cover and let stand for 12-15 minutes. (I usually let it simmer a few extra minutes to make a smoother dip.)
Once the lentils are done, add all other ingredients and mix together. In a food processor, blend everything together till smooth.
I don't usually have flax or hemp oil on hand but using all olive oil or canola or the like turns out just fine. =) This is really good with party crackers or on toast.

SO HOW'D IT GO?

With the cooking time and amount of water, the lentils didn't get cooked, just more softened. The end result was something very close to hummus, with only a little bit of that sprout/raw bean taste. The seasonings were pretty spot-on. I think it needs more liquid as it is blended, though, but that's easily fixed.
