Mabel's 29 Crash Vegetable Loaf

What you need: 

1-16oz can carrots (or a mix of veggies of your choice)
1-16oz green beans (or a mix of your choice)
1-16oz any bean (lime, chickpeas, pinto, or any mix)
3 c.breadcrumbs
1/3 cup vegetable oil
1/2 c-1 cup firm tofu
mixture of parsley, onion, celery salt pepper or your choice, to your taste
vegan chili sauce or vegan ketchup

What you do: 

Drain your carrots, beans and save the juice they come in, (unless you are on a salt restrictive diet) for more flavor I use a product that my health food store orders for me, it is made by a company called "Seitenbacher" and it is a vegetable broth and seasoning mix. It is vegan and gluten free and a wonderful flavor. I mix this in with a little of the veggie juice to kick it up a bit.
Run your veggies, beans, and tofu through a food processor until fairly smooth, unless you like it a little chunky, then process to your liking, then add the broth a little at a time in processor until it is smooth, add your seasonings, onion, herbs also.
Now dump this in a bowl big enough, and mix your bread crumbs as a "meat" loaf requires, you will have to adjust bread crumbs, and broth to get to your stage of loaf, (not too stiff, not too soft).
Preheat your oven to 350' (175c) spray a 9x5 loaf pan with veg spray or use veg oil to coat pan, put your mixture in pan, and press in to form your loaf. Bake 30-45 min in oven, more or less depending on your oven, until lightly brown on top, the last 10 mins you could put veggie ketchup and veggie bacon strips on if you wish. Serve with a salad and rice side dish if you wish. Please experiment with it, it is fun and again, very forgiving. Where I live, it is almost impossible to find vegan items, so I do order a lot of things through the health food store, or online. I am in the middle of meat and potatoes country. This is also very tasty with a vegan brown or vegan mushroom gravy, or a tomato base sauce.
Source of recipe: This recipe is from my grandma who lived through the 29 crash and beyond. Now this recipe is forgiving and is fun to experiment with, I had adjusted it as this was way before veganism, health food stores, this was the only thing available as meat was almost unheard of and too expensive.
