Vegan Cadbury Creme Eggs

What you need: 

1/2 cup brown rice syrup
1 tablespoon margarine (I like Earth Balance)
1/4 cup vegetable shortening
3 cups powdered sugar
1-1/2 teaspoons vanilla
1 12-ounce bag vegan chocolate chips

What you do: 

1. In a large bowl, place the brown rice syrup, margarine, and shortening and use a hand mixer to combine. Cream in powdered sugar until smooth. If you want to separate part the mixture and add food coloring (yellow to make it look more like an egg!) or flavored extracts (orange? coffee?), now is the time!
2. Make sure your hands are clean and cold, take small pieces of the mixture and roll into balls (the size of the inside of a Cadbury Creme Egg!) and place on greased sheet. Freeze this for at least 2 hours.
3. In a medium sized bowl, melt chocolate chips in the microwave. (if you want it to be a little more pliable, sometimes it helps to add a little melted shortening to the chocolate!)
4. Use a toothpick, dip each ball into the chocolate and place on wax paper. You can get fancy and use those egg molds, I found them at Michaels for like a buck. Deal! Freeze until hard and then wrap in foil. Happy hunting!

SO HOW'D IT GO?

these worked out well for me, but i altered the recipe a lot. i mostly just used this as a reminder for another recipe i once saw for these years ago that turned out excellent. i used:
corn syrup instead of brown rice syrup (gross stuff i know, but its for the good of the recipe. maybe brown rice syrup works just as well but i couldn't find any in the store),
1/4 cup of earth balance instead of just a tbsp and instead of the shortening
then took out a 1/4 of the mixture and added food coloring to it (5 drops red 2 yellow worked for me)

after you've mixed this all in a bowl, separate 1/4 of the mix into a different container and add the food coloring. then refrigerate BOTH mixes for at least 2 hours. after that, roll the orange mix into a small marble sized ball, and then take a small spoonful of the white mix and flatten it out and put the orange marble in the middle and wrap it in the white mix. make sense? do that until they are all done, but if it starts to get too sticky half way thru, put the mix back in the fridge and try again in a few hours. makes way more than 8. more like 2 dozen.

also, do NOT freeze. that has made it a lot harder to work with for me. refrigerate for at least 3 hours instead. i make these every year and usually i just stretch it all out over a few days and  leave them in the fridge overnight after each step.

for the chocolate, add 2 tbsp of shortening when you melt the 2 cups of chocolate and it will be a lot easier to work with. put the chocolate covered eggz back in the fridge for a few hours before doing a second coat of chocolate, and then back in the fridge one last time, and then you're done.
the second coat of chocolate will probably call for more chocolate than the recipe included. so plan for 1 cup chocolate chips to 1 tbsp shortening when you start adding chocolate

this year i made these in the shape of chocolate frogs. so cute! and MUCH easier to work with a mold instead of rolling the insides in chocolate, and you can skip the double coating step then too. i will post pictures of the frogs on my blog soon if anyone is interested: http://springaroundthebend.blogspot.com/

The person who posted the beautiful pics of these - is the recipe you used the one that is posted as of now? It worked for you, obviously, as they look delicious. I'm curious!

Or maybe you used a stock photo of a non-vegan homemade cadbury egg.

Oh, and I just made this recipe again and put a tablespoon of shortening in the chocolate and that made it perfect for dipping!

Hi guys! Maybe the creamer is a bad idea? It worked for me the one time but then I tried again, and it didn't. I am not sure what the deal is, I have to experiment. Maybe it's coconut vs. soy?

I will update the original recipe... I think adding a little earth balance or shortening to the chocolate could help! Or just plain chocolate chips work fine. Sorry for the confusion! Trial and error, I should made sure first!

The insides should be totally great though, I've been doing this combo non-stop. I wouldn't sub all earth balance though, shortening is key!
