Anyone made German Chocolate Cupcakes?

I want to make German chocolate cupcakes from vctotw for my dad this weekend.  Here's the question...for the frosting, can I just add more soy milk in place of coconut milk?  I don't have coconut milk and don't want to go all the way to the hfs to buy some.  Actually, I've never used coconut milk at all before, so I don't know if the consistency is similar to soy milk.  So yeah.  If I really need the coconut milk, I guess I can go buy some.  I'd rather not, though.

Oh gosh, I'm sure you could.  Coconut milk is more fatty than soymilk, but I really doubt it would be a problem for frosting.  (I've never made them though).

i cant find the recipe, but im sure you could sub it.
I just made frosting this week w/ coconut milk (for coconut cuppas) and really, i didnt think it was much more flavorful than using reg almond or soy milk. Its a tiny bit more creamy, but not enought to make much of a difference...i have seen others use soy creamer for frosting too, so if u have that, you could try it too.
You might want  to add a bit more extract tho...either vanilla, almond or coconut.

Thanks guys.  ;)b  I always think about buying coconut milk to try in something, but haven't gotten around to it.  I guess if the frosting doesn't get creamy enough with soymilk, I could up the cornstarch or something.  I'm sure I can play around a little...just wanted to make sure coconut milk wasn't like super thick...which I didn't think it was.

I've found the same about the flavor of the coconut milk, LA.  It really doesn't make a huge difference.
And also, for frosting, I tend to only have light or fat free soy milk on hand, and I just use that, and it works fine.

Take pictures of your cuppycakes so we can see!
