Carob Walnut Fudge

What you need: 

3/4 cup carob powder
1/4 cup oil/margarine
1/2 cup maple syrup/brown rice syrup
1/2 cup natural peanut butter (crunchy or creamy)
2-1/2 cups water
1/2 cup raisins
1/2 cup unsweetened shredded coconut
1/2 cup chopped walnuts

What you do: 

In saucepan over medium low heat, combine carob, oil, and syrup, stirring frequently.
Add peanut butter, then water, and stir until all is creamy, melted, and blended.
Add raisins, coconut, and nuts. Adjust quantities to your liking, if necessary.
Make sure all is completely and evenly distributed.
Pour into a pan covered with foil or plastic wrap.
Freeze briefly or refrigerate.
When chilled, cut into squares.
I used the carob powder/oil/syrup mixture in place of carob chips, as it was all I had on hand. You may adjust the recipe as well to suit what you've got available.
