Chocolate Chocolate Chip Pancakes

What you need: 

1 cup unbleached flour
1/2 cup whole wheat flour
2 tablespoons ground flax
3 tablespoons cocoa powder
2 teaspoons baking powder
2-3 tablespoons Sucanat
2 tablespoons oil (vegetable or canola)
1 1/2 cups soy milk
1 1/2 teaspoon vanilla
1/2 cup semi-sweet chocolate chips

What you do: 

Obviously, this isn't the healthiest breakfast, but sometimes a girl has to splurge...especially during that time of month. We need all we can get to make that time a bit more....tolerable.
Mix all of the dry ingredients in a large bowl.
In a medium bowl, mix the Sucanat and wet ingredients.
Combine the bowls and fold in chocolate chips. If the batter is too dry, add a tiny bit of water. If it's too wet, add a little bit of flour.
Pour onto a heated and lightly oiled skillet. Cook for 2 or so minutes until bubbles rise on the edges of the pancake. Flip and cook for an additional 2 or so minutes.
I like to serve these over bananas and topped with a little bit of chocolate syrup and some sugar-free maple syrup.

SO HOW'D IT GO?

I made a slightly more unhealthy but gluten-free version of the recipe by using half corn starch and half white rice flour plus guar gum instead of the gluten flours. I also added one flaxseed "egg" for binding. I somehow remembered the recipe to ask for 1 cup, instead of 1/2c, of chocolate chips, so mine came out extra-chocolatey.
I was really surprised by how nice the texture of my pancakes turned out, as a lot of the vegan gluten free pancakes that I make fall apart. These, on the other hand, held together very well. Maybe, I'll add a tiny bit more sweetener (I didn't have sucanat, so I used brown sugar) next time, but they were close to perfection already.

I made this for breakfast the first day I went vegan. I didn't have the flaxseed so I left that out.
I have to say they were pretty good, but I also have to say DONT EAT THE BATTER bleck that batter was gnarly.

Over all it was pretty good!

My coffee grinder broke and I couldn't grind the flax - so I used egg replacer instead, and this still turned out great.  I used bad-for-you vegan sugar in place of the sucanat, too, and it worked fine.

Sugar Cane Natural. It's just a natural unrefined sugar.

Mmm, I love chocolate chip pancakes! Add walnuts with the chocolate chips for added protein, and a glass of milk, and it's like having cookies & milk for breakfast! Can't beat that!
