Chopped Salad

What you need: 

2 medium cucumbers
2 large red tomatoes
1 large red onion
2 medium green peppers
5 tablespoons lemon juice
1/2 cup oil
Salt and pepper, to taste

What you do: 

1) Wash and then chop vegetables into tiny little cubes. Add to a large bowl and stir in oil and lemon juice. Season to taste. Chill for about 2 hours before serving and enjoy!

This was very tasty! But instead of using red onions, I had to use white onions. And I cheated and used 2tblsp of Italian dressing.

I can't eat raw tomatoes. Does anyone know if canned diced tomatoes (drained) would be good in this?

yummy and simple :) I added sweet corn, fresh off the cob, totally loved it and will make it many times again!:)

Wow. I just got back from Turkey and this is a staple. It's so funny because I thought I would be coming home and checking vegweb for some truly unique recipes and I find the description of what I've been living on for the past month. It's delicious by the way. Kudos.  ;)b

This was a nice little salad.  I reduced the oil by half and used cold pressed, unfiltered EVOO instead of vegetable oil, juice of 1 lemon, and I crushed a clove of garlic in it and added some oregano, dried in my dehydrator at 95°F.
