Easy Pancakes

What you need: 

2 1/2 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups nondairy milk or water
dash cinnamon, optional

What you do: 

1. Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. It's important only to mix the batter enough to moisten, as overmixing will make the pancakes tough.
2. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyone's starving!)
3. Cook over medium to medium-high on an oiled skillet until golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

the batter makes SO many pancakes.  :o
i've already made 11 pancakes the size of my hand and still have half the batter left!

really fluffy and yummy, but but i discovered it is possible to not stir enough.  i had a few unpleaseant bites that had a concentration of baking powder/saltiness.  otherwise they are easy and deliciously light.. you just gotta find the middle ground on the stirring.

very tasty! I added pumkin seeds and flax, everyone enjoyed and were so impressed they had no eggs! YUM!

Hanukkah is my favorite time of year. Getting together with my family around the manor-ah  brings back childhood memories. We made these with only 1 tablespoon of sugar and 1/2 teaspoon of salt. My Mama was schvitzing! Happy Chanukah!

OMG, your picture is mouth-watering. Despite being a good cook and baker (I won't lie, LOL), I cannot make good vegan pancakes unless they're Aunt Jemima. Never had a problem before I went vegan. My point is: I wish I could make and eat your pancakes, because they look amazing! :-)

Mmmmm mmmmm mmmmm delicious!  Followed recipe to a tee, except added a dash of vanilla and didn't wait for batter to sit.  Super good and so simple too!  Thanks for the great recipe!

I cut this recipe in half... the batter was very thick and I didn't think they would cook all the way through. In fact, I was skeptical of the entire process up until the point when i had my first bite  :-\ ... they are delicious!  :P These are the fluffiest homemade pancakes i've ever had! They're even better with a little bit of margarine spread on the top. YUM!

I have to say that recipe changed my life as a pancake maker. After going vegan and ditching the premade batter crap, I've had such a difficult time making pancakes. They were either too dense, or they stuck right to the pan, or completely raw in the middle-- that is, until I encountered this recipe. It is fool proof and delicious! I add blueberries and chocolate chips and I feel like I've died and gone to heaven!

I just wanted to add that these were indeed easy, light, fluffy, and perfect! We kept adding oil to the pan after each pancake so they wouldn't stick, and med-high heat was just right. Excellent recipe!

:o when i made these pancakes they where super gross and hada horrible strong taste (EVERYONE who tried one complained!)and i followed the instructions exactly! =S
i cant see how they sucked so  bad as everyone gave a great review!i musta done something wrong  >:(  but i just cant figure out what!anyone wanna help? :(

Might have been the baking powder - it can have an off taste if you use too much.  I know I only use about half of what the recipe calls for and they turn out just fine.
