Easy Pancakes

What you need: 

2 1/2 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups nondairy milk or water
dash cinnamon, optional

What you do: 

1. Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. It's important only to mix the batter enough to moisten, as overmixing will make the pancakes tough.
2. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyone's starving!)
3. Cook over medium to medium-high on an oiled skillet until golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

SO HOW'D IT GO?

I usually make 1/2 the recipe, but last weekend I had guests and made a full batch.  It made 5 seriously over-sized pancakes!  Yummy, as always, but I'll stick to 1/2 a batch.

eek i had trouble with these. no matter how much sugar i added, the batter was still salty and bitter. maple syrup, vanilla extract, and blueberries were the only life saver. i think it had to do with the full 2 tbsp baking powder (i was going to do only 1 but i wanted extra-fluffy pancakes) we did eat them all up, but afterwardwards i made up a quick batch from a boxed pre-mix to use up our remaining fresh blueberries and we decided that the box mix is fool proof and delicious.

phenomenal - and easy! 

I made a few tweaks - organic spelt flower (instead of all purpose flower), agave nectar i(nstead of sugar), coconut oil (instead of veg oil)  and sea salt (instead of table salt).  I added fresh blueberries to the batter, as well.  and topped the finished pancakes with a banana-blueberry compote (warm fresh banana and blueberries, agave nectar and a bit of coconut oil).  The final meal was truly delicious.  The best breakfast I've had in years.

never mind, i made these again and the were sooo good, the only thing they needed was vanilla which i added but they were yum :)>>>

i don't know wats wrong but i have tried to make these twice and both times the batter was heavy, and the pancakes had a very hard crust, and stayed doughy in the middle, any help? :'( :-[

yummy, easy pancakes. much fluffier than any other vegan recipes i've tried..actually taste like pancakes! i added cinnamon and served with apple sauce and honey. tasty! thank you.  :)

I'm not much of a pancake fan but these are as good as any others. The batter does make a lot. I have breakfast settled for a week now.

I only used one T of baking powder, some cinnamon, and added a chopped apple. Fabulous! Makes a lot. And I should have grated the apple instead of chopping it, but I was too lazy...

My sister visited me this weekend and I made these for breakfast.  She LOVED them and she's a very picky eater!  ;D

this is one of our standby recipes! we make it almost every weekend and love adding vegan chocolate chips.
