Wholemeal Banana Pancakes

What you need: 

1/2 cup wholemeal flour
1 teaspoon baking powder
1 tablespoon soy yoghurt
1 small very ripe banana, mashed
2 teaspoons sunflower seeds
1/2 cup rice milk
1/2 teaspoon cinnamon

What you do: 

Combine all ingredients in a bowl and beat well until smooth.
Heat a little oil in a non stick pan at medium heat. Pour about one quarter of the batter into the pan and swirl around (if you want it thinner)
Cook until bubbles stop reforming and flip, cook other side until golden.
Serve with pure maple syrup or fresh fruit if you like, but they're delicious by themselves too!
