Feel Good Kale Sauce with Pasta

What you need: 

3 to 4 servings pasta (I like Angel Hair)
1 carrot
1/2 onion
2 large kale leaves, large stems removed
2 garlic cloves
2 tablespoons olive oil
salt and pepper, to taste
1/2 cup unsweetened or plain nondairy milk (I use soy)
1/3 cup nutritional yeast

What you do: 

1. Cook your pasta according to package directions. If you do this simultaneously, you can have dinner ready in 12 minutes or less. Drain, when done.
2. While the pasta is cooking, put the carrot, onion, kale leaves, and garlic cloves into the food processor to create a pulp. It shouldn't be a liquid, but just very pulpy and small little bits.
3. Heat the olive oil in a pan, and add the vegetable pulp. Saute it for about 5 minutes, and add salt and pepper as you cook it. When it is heated through, pour the milk into the mixture and allow it to get hot and a little bit bubbly.
4. Add the nutritional yeast, and mix it in and keep cooking it. You can add more milk if you would like a thinner sauce. Add salt and pepper to taste. Mix sauce with drained pasta.
This sauce is delicious mixed into pasta, and I feel good every time I eat it (which is about once per week). My kids prefer it as a side dish. All the omnis I have served it to like it as well!
Source of recipe: Hoopy~D gave me the idea for this sauce, and I have run with it and make it all the time! It's my go to recipe because I usually have all of the ingredients on hand.

Sooo..this is one of my favorite recipes. I've reviewed it twice. If you're craving something "creamy" and comforting this is it!! I've made it "by the recipe" but I've switched it up a lil. I add chickpeas and omit the oil. If you wanna try a soyfree version, switch up the soymilk for the following:

1/2 c. raw cashews soaked in warm water for about an hour
1 garlic clove
1 veggie bouillion
and 3/4 c. hot water

place ingredients in blender and process untill smooth. Set this mixture aside until the recipe calls for soymilk.

I think it adds more depth to the dish.

My favorite thing about this recipe is that it takes so little time and it's very good for you!! I highly suggest making this!! Two thumbs up for sure!! ;)b ;)b

Ok this is truly the bomb!!!!! I couldn't get over how simple it was yet how awesome it is!!! I was a bit reluctant on how it may be taste wise given that I reduced that onion since I was afraid it would be overpowering but the nutr'l yeast balanced it all out! I mixed in almond milk I whipped up while preparing thi dish. Once done, I poured mine over angel hair organic wheat noodles with sliced tomatoes and mixed it up and then topped the dish off with some rice cheese!!! Woo weee, slamming! i took pics with my phone but it may not look as appetizing seeing as how I poured the whole pot over the noodles. Many thanks for adding this easy dish!!!

;)b    Made this for dinner tonight. I had all the ingredients besides the pasta. I added some celery and chickpeas to the "pulp" mixture. Also cooked it with some sliced baby bellas('cause i put 'em in everything) I was impressed :) Can't wait for lunch tomorrow :P

I use a similar recipe but I add a block of pureed tofu for a "fettuccine" texture and some finely chopped soy-sausages to make it heartier!

Made this last night with veggie pasta (beet, tomato, and spinach with fun matching colors). It was pretty good, but felt like it was missing something. The leftover 1/2 of an avocado in the fridge was exactly the thing, and made it super amazing! Can't wait to eat the leftovers for lunch today, and will definitely be making again with possibly a whole 'cado next time.

Oh l2a, this was fabulous!!!  ;)b I doubled the sauce recipe, cuz I love it saucy - and I used a ton of kale!  Definitely made me feel better about eating an entire plate of pasta....this is a keeper!
