Kale Salad

What you need: 

1/4 cup nut butter (I like almond butter)
1/4 cup vegan mayonnaise (I use Vegenaise)
2 tablespoons soy sauce
1/2 teaspoon sesame oil
1-2 tablespoons rice vinegar
2 teaspoons minced ginger
1 bunch kale, stems removed and chopped
1/2 cup carrots, shredded
1/2 cup red pepper, diced
1/2 cup scallions, chopped
1/4 cup toasted sesame seeds
1/2 cup toasted almonds
1 cup baked tofu or fried tempeh, diced

What you do: 

1. Whisk together nut butter, vegan mayo, soy sauce, sesame oil, rice vinegar, ginger, and enough water to make a thin dressing.
2. Toss veggies, nuts, and tofu/tempeh in a bowl, pour dressing over, and serve.
This recipe is very versatile and you can include any veggies or nuts/seeds that you enjoy!

I wish I could say the same as everyone else about this salad but I just didn't like it. Despite liking mayonnaise on sandwiches and stuff, I found the mayonnaise and nut butter mix to be pretty unappetizing and I actually started off halving the mayo. Oh well.

This salad which really was a meal was absolutely delicious!! I used a curry seasoned tempeh and followed the recipe to the T! This goes in my yummy recipes to make again file!

MMmmm, this was truly amazing! It ended up getting modified "a bit" as I went along... added cucumber, sauteed mushrooms, lightly steamed broccoli, raisins, 3/4 an apple, 1/4ish head of red cabbage, walnuts, a 2nd bell pepper (yellow)... didn't have scallions, but threw in a finely chopped small onion... was feeling too lazy to make mayo, so I used homemade plain yogurt.... I used both tofu and tempeh. I used a wide assortment of random leaves rather than just kale (it's what I had). This salad got very big. I'm happy to say we'll get to enjoy it for a day or two ;-)  YUM YUM!

We love kale salad and this is a good one!  I changed up the veggies a little...used a mixture of raw kale and turnip greens, omitted the carrots and scallions, but upped the red onion.  I also left out the almonds.  I grated the ginger and in addition to the sesame oil, I also added some chili oil for some spice.  The dressing was a little thicker than I like, so I thinned it with a little water.  I topped it with cubed, pan fried tempeh.  We loved it!

I also slightly steamed the kale the first time I made this, but the second time, I ate it raw and it was very good. The dressing on this makes the salad - - it is a surprisingly different way to serve kale and a large portion could easily be a light meal by itself. :)  Oh, and it's fast and easy!

I steamed the kale and added some swiss chard and different veggies (cherry tomatoes, cucumbers, red onions) and it was still awesome. My meat eating husband loved it too, but he usually trusts me. Really yummy sauce... I'll definitely make this again.

Pretty good salad...I left a few things out, carrots because I was too lazy to shred them and nuts because I plum forgot....
I used tahini as the nut butter and smoke tofu, but everything else was the same....oh, and I lightly steamed the kale first because I'm a little afraid to eat it raw....even steamed a little, it was still quite bitter....but I enjoyed it - my husband devoured it, but he's addicted to smoked tofu.

This was awesome! The dressing was delilcious! A terrific way to eat uncooked kale.

Anyways I added a tinsy bit of Sriracha to the dressing, left out the roasted almonds because I didn't have any, and I also roasted the red peppers.

I also added tofurky's sesame ginger marinated tempeh!! http://www.tofurky.com/tempehproducts/marinated_strips.html. It goes so great with the salad, and I don't even normally like tempeh!!
