Laab (vegan version)

What you need: 

1 cup hydrated TVP granules, drained
2 cloves garlic, chopped
olive oil, as needed
1 medium sized onion, chopped
3-4 stalks green onion, chopped
3-4 tablespoons ground roasted rice powder
1-3 red hot peppers, crushed
2 limes
jasmine rice, to serve

What you do: 

1. Cook TVP with olive oil and garlic. Cook until any moisture is out of TVP; set aside. Add onion and green onion to a large bowl.
2. Add cooked TVP to bowl and combine with onion and green onion. Mix in roasted rice powder and hot pepper, mix thoroughly.
3. Cut limes in half and squeeze over mixture and blend all together. Serve with freshly cooked jasmine rice.
I also like to take romaine hearts and scoop up the mixture to eat that way if I don't want to eat rice with it. I hope you enjoy!
Source of recipe: This is a traditional Thai dish that I grew up on (my Mom always made it with ground beef). I have since made changes to the recipe to fit my lifestyle. This dish is always requested when I attend events.

Hi Sharronsuss....

You are absolutely correct on what roasted rice powdeer is.  Just be careful when toasting the rice.  Don't get it too brown because then it will have more of a burnt flavor.  :coolsmile: Let me know how it turns out.  I think I am going to make some today.  :)

I'd like to try this but don't know what "roasted rice powder" is.  Sounds like I can make it by pan-toasting raw rice and then blending or grinding it to powder in Vitamix or my poor abused coffee grinder, but my thinking may be way off.

Clarification, please?  :D
