Lentil Burgers

What you need: 

1 cup lentils (red or green)

1 1/2 cups water

1 tbsp vegetable base or bouillon 

1/2 a small onion, diced

3 cloves raw garlic, minced

3/4 cup cooked wilted spinach

1 tbsp cumin

1 tsp paprika

Olive oil

Salt and pepper

 

What you do: 

1. Simmer lentils in water for about 25 minutes or until cooked. Add the bouillon/base about halfway through cook time.

2. Transfer cooked lentils to a bowl and add the onion, garlic, spinach, cumin, and paprika. Mash until about 1/2 the lentils are still whole. Olive oil can help to bind it, but it's not necessary.

3. Shape the mixture into individual "burger"-sized pieces. 

4. Sautee for about 10-15 minutes until burgers are slightly crispy on the outside. Add salt and pepper as you cook.
