Lentil Tapenade

What you need: 

1 cup cooked lentils
1/6 cup olive oil
1/2 lemon, juiced
1 to 2 tablespoons capers, chopped
1 to 2 tablespoons finely chopped parsley
sea salt, to taste

What you do: 

1. Mix ingredients together.
2. Taste, and adjust seasonings and lemon.
Alternatively, you can add olives.
Source of recipe: While surfing the net for ideas one night, I took several ideas and put them together to make this healthy tapenade.

SO HOW'D IT GO?

Great idea!  I used lentils, black olives, a few Kalamita olives, 1TB capers, 1/4 garlic clove, and 1/2 roasted red pepper.
