Orange Poppy Seed Muffins

What you need: 

2 cups all purpose flour (or substitute white whole wheat flour)
3/4 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup orange juice
1/2 cup nondairy milk
1 tablespoon ground flaxseed meal
1/3 cup unsweetened applesauce
1 teaspoon vanilla
1 tablespoon poppy seeds, or to taste

What you do: 

1. Preheat oven to 400 degrees Fahrenheit. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
2. In a liquid measuring cup, measure the orange juice and milk, then add flaxseed meal, applesauce, and vanilla. Make a well in the dry ingredients, add liquid, and stir to combine. Fold poppy seeds into batter.
3. Spoon batter into prepared muffin cups (I use my 1/3 cup measuring cup, but your muffin pan might be slightly different). Bake for about 15 minutes and allow the muffins to cool before removing them from tin.

SO HOW'D IT GO?

These were good.  I used half white flour and half whole wheat pastry.  I only had about 1/2 tbsp poppy seeds, but I don't know that it made too much of a difference.  I added about 1/2 cup chopped walnuts to the batter for a nice crunch.  If I make these again, I will add some orange zest for more flavor.

I love the fact that this muffin doesn't have any oil in it. If you are a regular sweet tooth though, be sure and add ALL of the recommended sugar like I didn't  :-\ I didn't have zest so I used a mixture of mango juice and orange/passion frozen concentrate. I think the concentrate really helped with the flavor and my husband loved them. I baked mine for 14 minutes but I think I could have taken it out a minute or two earlier. Best practice is probably just to check them with a toothpick since every oven is a bit different. Oh yeah, and it probably didn't help that i did NOT use all the recommended liquid. It just looked too soupy. Either way, I'll be making this recipe again. Thanks!

Very good! I made a batch exactly as written and they turned out fine.

It is true that the orange flavor is subtle but it's noticeable and overall they're very tasty! I might try a bit of zest or extract next time I make them, since I'm sure there will be a next time.

These are more like cupcakes... They aren't as dense and crummy as muffins tend to be.

I can't stop myself from eating up all the batter before they make it into the oven MMM. My only problem is.. in batter form they are very orangy, but after backing I hardly, if at all, taste the orange. Maybe if I get some orange extract of some kind it will help bring out the orange flavor after baking.

I tend to also put an insane amount of poppy in them haha.

Either way I love these and will be eating them for years to come!

;)b These are good, and turned out fluffy when not over-stirred and baked at 375 degrees in my oven! I tried something a little different, though. I didn't have any poppy seeds, but I wanted to make some orange-flavored muffins, and this looked like a really good recipe. So I substituted unsweetened shredded coconut for the seeds. I also used 1 cup of dates in place of sugar, soaked in water for 20 minutes and drained. I also added one teaspoon of natural orange flavoring. They turned out yummy, but could stand to be just a little sweeter, so I may add some honey next time with the dates.

I loved these!! Mine didn't come out fluffy but it was a fault of my own. I will definitely make these again. Delish!

These turned out well! I used 1/3 cup canola oil instead of the applesauce because I didn't have any on hand, and added a lot of orange zest. They're not too sweet, nice flavor, and pretty moist! I would make them again.

These were very good, turned out very fluffy and such. The only thing is 400 degrees was really too high for my oven to cook them at. The bottoms got a tad burnt :(
