Real-tasting Mayonnaise
What you need:
1 tablespoon ground flax seed
3 tablespoons water
1 teaspoon salt
1 teaspoon sugar
1 teaspoon ground mustard
dash cayenne
1 1/4 cups oil, divided
3 tablespoons lemon juice
What you do:
1. Combine the flax seed and water; microwave 10 seconds, then cool to room temperature
2. In a blender (or preferably with a hand blender), combine the flax seed mixture, spices, and 1/4 cup oil.
3. While mixing, slowly add another 1/2 cup oil. Continue mixing, and add the lemon juice.
4. Still mixing, add the remaining 1/2 cup oil. Store in a jar in the fridge.

SO HOW'D IT GO?
This is the recipe I've been looking for in a long time, and have tryed alot of other way too make vegan mayonnaise, by this recipe is by far the best. Th only note is that when I made it today,(for the first time), most of the flax seed ended up hold in the mayo. Have anyone else experinced that The next time I'll try grounding the flax + plus water, and then follow the recipe. Hope it works.

Thank you so much for sharing this!!! It worked awesome. I did end up not adding the full amount of the oil, as I was happy with the results before then and had more than enough for what I was doing. I made this in my Vita-Mix at a medium speed and added the oil so gradual that it was really only a trickle. Perfect consistency!
I'm so happy to have found this recipe... being not only vegan, but having soy sensitivities as well, I thought mayo was a thing of the past for me. No longer!
Hey great recipe! I made it pretty much as you instructed, minus some lemon and salt. I used a blender (a cheap one from Loblaws), and it turned out beautifully! Thanks for the great recipe.
I just made this. It is yummy, but it doesn't taste like mayo. Too much flavour, IMO. I could really taste the lemon, especially. I only added 1/2 a tsp of salt and way less oil than it asked for. I only added less oil because so many people said it turned out soupy. I just went little by little emulsifying while I went. I don't know how much I ended up using--probably less than 3/4 cup. Maybe that is the reason there was too much flavour :P ;).

How long would this keep in the fridge?
It works! I used 1/2 the amount salt called for, since that's the amount called for in my favorite egg-based T&T recipe. I used a stick blender with the blade, but when I later tried it with the whisk attachment, it didn't set up. I also microwaved the flax/water mixture 35" because 10" weren't enough to fully cook it in my (1100W) microwave.
Thank you for this, spydrrrr. Now I can enjoy old-fashioned mayo vegan style!
