Spice Cake

What you need: 

1 1/2 cup flour (I used white)
2 teaspoons baking powder
2 teaspoons Ener-G egg replacer powder
1/4 cup sucanat + 1/2 cup unbleached sugar (what I had)
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
3/4 cup soymilk
1//4 cup oil
1 teaspoon vanilla

What you do: 

Mix all dry ingredients.
Mix in the soymilk, oil, and vanilla.
Transfer to cake pan and bake at 350 for 35 minutes or until a knife comes out clean.
I was going to put a glaze on it, but it's so sweet and tasty as it is!

SO HOW'D IT GO?

I use round cake pans--I just measured the diameter and it is 9". If it's the wrong size, it will just be thinner/thicker though (and you can adjust the baking time accordingly). Sorry for the omission!

I haven't made this, but looking at the amounts of ingredients, and the time needed to bake... I'd guess 8" square or 9" square pan.  Usually for a 9 x 13 pan, you'll see around 3 C of flour.

what size pan?  8x8, 9x13?
