Spicy Lentil Soup

What you need: 

1 teaspoon vegetable oil
1 onion, diced
1 carrot, sliced
1 stalk celery, sliced
6 cups vegetable broth
1 cup dry lentils
1/2 cup of brown rice (optional)
1/2 teaspoon pepper
1 teaspoon dried thyme
2 bay leaves
1/8 teaspoon (dash) salt
cayenne pepper sauce (optional; I use Frank's RedHot)
1 tablespoon lemon juice

What you do: 

1. In a large pot, heat vegetable oil. Add and saute onions, carrot, and celery for 3 to 5 minutes, or until onions turn clear.
2. Add the vegetable broth, lentils, rice, pepper, thyme, bay leaves, and salt.
3. Reduce heat to a simmer. Cover and cook until lentils are soft, 45 to 60 minutes (depending on lentil freshness and variety).
4. Stir in cayenne pepper sauce if you want spicy. Remove bay leaves and stir in lemon juice before serving. Best served with pita.
Add or subtract ingredients if you like a certain taste!
Source of recipe: I wrote this recipy. I wanted lentil soup but at the same time I wanted something a bit more spicy.
