Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

This is a wonderful, quick, and easy recipe! I made them a little larger, so I ended up with 6 muffins in total. They are delicious! Instead of the oil, I used vegan margarine, and they turned out great. I added a few handfuls of quick oats and hemp hearts, as well. Overall, exceedingly pleased! Will definitely make these again :-)

These are very good and easy. You could make any kind of muffins with this recipe. Just change what fruit you put in them.

I have made these muffins an ENDLESS amount of times.

I usually use half frozen blueberries and half dried blueberries because I love the flavour, but with all fresh or frozen, they're too moist and the insides don't bake right.

Truly an amazing recipe! My non-vegan mom asks me to make them at least once a month.

I've made these many times and even substituted the blueberries with different fruits. They come out great every time. Even my omni family loves them. Thanks again for a great recipe!

I made these twice. The first time I did exactly as the recipe said. The muffins got very brown and tasted a little salty and not very sweet. The 2nd time, I added a little more sugar, reduced the salt to 1/2 t. and the oven temp. to 350 degrees. I baked them for 25 minutes and they were perfect. I also used fructose instead of the sugar so my diabetic friends could eat them. Thanks for the great recipe, I will be making them a lot, with the revisions. :)

These were sooo Delicious and amazingly easy to make!! I used almond milk and they came out like biscuits, yummm. But i only got 6 out of the batch.  ;)b

The quintessential muffin. Incredibly easy to make, and incredibly delicious! The subtle sweetness of the muffin brings out the taste of each blueberry.

I've made this at least five times, probably more around ten. And every time I do, my omni family members gobble them up!

Doubled the recipe to make enough for the whole family (including my brother's friends who practically live here!) and turned out wonderfully. Half oil and half applesauce and added a tsp or so of vanilla. I can't wait to try 'em with different flours and fruits and perhaps a yummy crumb topping!

I made these tonight! They turned out wonderfully! I doubled the recipe, and threw in some oats and chopped walnuts. I can't stop eating them! Thank you so much for this lovely creation. :)
