Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

Best muffins I've ever made. I'm terrible at making muffins. Plus my little apartment sized half stove burns everything. I used stone ground whole wheat flour, 1 and 1/2 cups blueberries/mulberries, and Very Vanilla Soymilk. I also followed the suggestion to use brown sugar and added 2 Tbsp of Flax meal as well. I found  out last week that I can no longer eat white flour, and I despise wheat. This recipe is making the transition a little easier :D I made 11 muffins and pulled them at around 20 mins.

Delicious, and easy! I did have to add more soy milk, but I probably just had added some extra flour. I also added vanilla, and used fresh blueberries. I got 10 muffins. Mmm.

These turned out great!  I loved the almost crisp exterior, too.  The only substitution was almond milk for the soy milk.  I baked these in a large muffin tin and got 6 muffins out of it after baking 20 minutes.  They didn't fill up the tin all the way so I guess they were medium muffins.

These are amazing!!

I just made them with gluten-free rice flour & 1/2 cup oats.. then everything else exactly the same. They bakeD for 32 minutes and were soft & fluffy inside! Yum!!  :)>>>

Very very good! I used frozen blackberries and it came out excellent. Thanks for a great recipe.

Amazing! I've tried several vegan muffin recipes and this one finally takes me back to the muffins of my non-vegan days! I used mixed berries instead of blueberries, and they were yummy!

These were to-die-for.  I'll admit, I threw in a little extra sugar and brown sugar.  They didn't turn out too sweet but they probably didn't have to be that sweet.  I've been disappointed quite often with vegan muffin recipes because they were not sweet at all, so I wanted to make sure.  I wrapped them individually and the next morning when I sat down to have one at work, it was even better than fresh out of the oven.

These are really good!  The first time I made them, I used 1/2 cup whole wheat flour and 1 cup white flour, and I sprinkled almonds on the top.  They were perfect!

This morning I made them again and used ALL whole wheat flour.  I needed to add 1/4 cup more soymilk that time because of all the whole wheat, and they came out perfect again.  Two thumbs up.
