Waldorf Salad Karens Way

What you need: 

5 crisp, tart apples cut into bite-sized chunks (a mixed variety, or all the same is good)
juice of 1 lemon
3-4 stalks celery cut into bite-sized pieces
3/4 cup walnut pieces (or pecans, hazelnuts...)
1/2 cup raisins
1/4 cup dried cranberries
3 scoops/to taste of a binding ingredient (nayo, soy yogurt...)

What you do: 

Cut apples, place in large bowl, squeeze lemon over all pieces. Mix to thoroughly coat. (Keeps apples from going brown).
Add celery, nuts, dried fruits. These are all to taste. Mix well.
Add binding ingredient, again to taste. Mix well.
Refrigerate. Best after being in a nice cold frige for a few hours. Eat. Yum!
My mom often served this with a holiday meal. Also nice for pot-luck, lunch, brunch. Very versatile. Also something the kids can help with.

great for a lunch on a hot day!  i made this into a smaller serving and used one golden delicious apple and added a 15oz can of chickpeas (mashed a la chickpea/tuna/chikn salad), i just threw in a handfull of pecan pieces and dried cranberries.  i left out the raisins, celery and i forgot the lemon juice but it was delicious.  i can't wait to try my leftovers after they spend some time in the fridge.  my mom really likes a waldorf chicken salad at a restaurant near her, i'll definitely make this for her when i go visit.


I've made this for brunch per Karen's mom's way and it was a big hit, particularly with folks who wan to cut cholesterol, so they want something besides sausage with their waffles!

Alterations: I never use the soygurt, just the yummy lemon juice. And sometimes fresh chopped mint.
