I just picked up my copy of Vegan Cupcakes Take Over the World! I'm so excited... what should I try first?

was there a cupcake porn thread on here or am i thinking of stemma?

I bought the book last week and desesperately want to try out some recipes. However, I'm not a baker, so I have this stupid question : Do we really need paper liners? Because I would like to bake something tonight and there are no liners here.. :-[

Nope, not needed at all. Just lightly grease the pan like you would a regular cake and you'll be fine. That's what I do since it's just a waste of paper. Be sure to let the cupcakes cool before trying to remove them from the pan though or you'll end up with pieces of cupcakes.

Nope, not needed at all. Just lightly grease the pan like you would a regular cake and you'll be fine. That's what I do since it's just a waste of paper. Be sure to let the cupcakes cool before trying to remove them from the pan though or you'll end up with pieces of cupcakes.

I hate wasting paper too. I just use the wrapper from my vegan butter sticks, rub the buttery side on my cupcake tins or cookie trays to oil them.

I can't help but eat the batter and frosting (I have a real serious sweet tooth. You have no idea). And I love to bake at night so I eat it all right before bed. Then I wake up and have sweets for breakfast before pawning everything off on coworkers and such.  :-D

i swear we must have like 99.99999999999% of the exact same genes.

Ha, me too. Somehow I think that there are no calories in the batter or frosting because it is not finished product. And there is nothing like a cupcake to get you out of bed in the morning... ;)b

I can finally contribute to the thread! I got this book for my birthday and have made two recipes with good results. The Mucho Margarita cupcakes were the first ones that I made (no pics) and while the icing was too runny for my tastes, even after adding more powdered sugar, they were tasty. I made the cookies and cream cupcakes tonight for a party and I loved those! They were a huge hit, and I was the only vegetarian at the party. Tip - if you don't want to spend $5 for one package of cookies (seriously, Paul Newman?), the 365 Whole Foods brand of oreo-esque cookies are only $2.50/box and you get enough cookies for two dozen cupcakes, including the frosting and the half-cookie decoration. Pics are below!

ooo! i just thought of something ive been wondering for awhile..for the margarita cupcakes, should i do the salt in the frosting or no? i just got limes and that fancy sugar, so i think im going to make them sometime this week  ;D

I'm interested to see if they turn out well for you. I made them about a month ago, and they were dreadful! Totally sunken, gummy, pale, bland, and just generally blech. I've seen gorgeous pictures of them online, so I don't think it's a bad recipe... But I followed it EXACTLY, and these are the only cupcakes from this book that haven't turned out delicious! ???

I chose to not make them with salt, but then again, I always hated the salty rim on actual margaritas. Without the salt they taste like lime goodness.

Maybe you can make the icing, spoon a little out, and drop an ever-so-small amount of salt in and see how it tastes.

JessaCita, were they gummy and such even after they cooled, or just right out of the oven? Mine were sticky and seemed uncooked when I took them out of the oven, but after they cooled they were spongy and tasty. Of the two I made out of the book so far, though, the Cookies and Cream cupcakes were by far superior.

-pineapple right-side-up with rum (KMK, any tips or pointers from your experience?)
-coconut lime with rum ??
-cookies 'n cream with kahlua or amaretto or something??

i've made the mucho margarita and rum raisin before, but i wanted to try something different.  i'm also pretty crap at the frosting thing, so topping the cupcakes with shredded coconut or cookies or little umbrellas to detract from my sub-par piping skills is part of the plan.

additional input and advice is greatly appreciated!

coconut lime, you could add a TBSP of rum into the frosting in place of soymilk/lime juice. I have never tried it, but I don't see why it wouldn't work!

and cookies n cream... definitely go with kahlua... again in the frosting! You could probably get away with adding amaretta into the batter (1/4 cup, maybe replacing some soymilk).

This sounds like my kinda party!

Queen Bee, the tiramisu cupcakes are fantastic and use kahlua.  They were very, very well-received by nonveg family last Christmas.

Up until now, I've made the Mucho Margarita and the vanilla basic one. The vanilla was good, but I didn't make any frosting, so it was very basic. However, I loved the mucho margarita ones! Yes, the frosting was a tad runny, but it was limey et tequila-ish. Love!

Next one will be chai cupcakes methinks!

right now i'm thinking coco-lime w/rum plus the cookies 'n cream w/kahlua (and maybe amaretto too?) over the tiramisu, if only because it's an outdoor pool type of party, and i don't want to worry about forks and plates and whatnot - based on the description in VCTOW, sounds like the tiramisu could get messy.  i'll keep them on my list though, and make them for maybe a quieter function :)

i'll try to post pics or at least give feedback on how everything turns out.

The Chai were the first kind I made from this book, and still one of my favorites! They're more muffin-like than cupcakes if you just top with powdered sugar, and I love them!
