The Joy of Vegan Baking

Anyone try this cookbook? Or planning on buying it?

After VCTOTW and this site, I don't know if I really *need* a new cookbook on desserts... but... well, anyone?

Well, I can't speak about any difference w/ the flour sub. b/c I've never used AP..but I don't see how they could taste much better with AP. I've used both oil and EB...and I think they were better with the EB (although..they were still really good w/oil). I used flax the same time I used oil...and the EB/Ener-G waffles trump the oil/flax waffles...so I dunno what made the biggest difference (probably just combination). I think Ener-G is easier to work with, and whipped flax kinda grosses me out.

OK, I think I'm going to try the whole wheat pastry flour next time (soon), probably with the flax seed.  Maybe I'll try the Ener-G soon, though.  I may try doing half EB and half oil, especially when I get low on EB.  Thanks for your ideas.

Chocolate Banana Shake - Simple and sweet recipe. This shake has a rich taste, but is surprisingly nutritious.

I made the Cinnamon Coffee Cake this evening and it is AWESOME! I'd say its the best coffee cake I've ever made. Its very moist and spicy. I love it. I will say my husband thought it was too moist and should have been more crumbly. But I'm thrilled.

I forgot to post that I made the Chocolate Almond Brittle a while back.  This was actually the first thing I made from the book--that delcious-looking picture in the book was calling me!  The Brittle is absolutely addictive and super tasty, but I probably won't make it again soon as this recipe is soooo fatty and sweet.  With 1/2 cup margarine and 1/2 cup chocolate, it can't help but be fatty, sweet crack!  The Brittle is very easy to make with just 4 ingredients--graham crackers (I used cinnamon), margarine, chocolate chips, and almonds.  If you're looking for an easy sweet treat and can come to terms with the fact that this recipe is basically just fat and sugar, this is the recipe for you.

I made the pancakes this morning using half ww and half ap flour.  They were really good, nice and fluffy.  For syrup I made a half order of the blueberry mixture from the blueberry oatmeal bars on fatfreevegan.com.  Delicious.  Next time I think I'll add cinnamon to the pancakes and make an apple syrup.

I made the pancakes (again) using WW pastry flour, and added huckleberries and pecans! So good. I also made the brown sugar syrup (halved it), and it turned out pretty well! I think it's definitely a good sub. for maple syrup.

chocolate pudding - amazing
chocolate mousse - more amazing
butterscotch pudding - amazing
oat bran muffins - pretty good tasting for healthy. i used apple butter as the filling.
raspberry oat bars - pretty good, but not as good as the blueberry oatbars at starbucks. cheaper, though!
cinnamon rolls - these were very bready and swirled out, oozing most of the filling while baking (maybe i should have used a smaller pan...). Eh.
irish soda bread - pretty good, but as it says, try to consume it within one day.
melonpan - surprisingly good! especially the cookie topping ;) doesn't last too long either.
oatmeal cookies - so so so so tasty. next time i'll add more spice though.
gingerbread scones - sucked. dry, not sweet. and i really wanted some gingerbread...
blueberry lemon muffins - weird flavor... not sure where it came from...
blueberry cake - no weird flavor. pretty good, but cinnamon coffee cake is still better.
banana chocolate chip muffins - a.ma.zing. too tasty to qualify as breakfast.
pb chocolate cupcakes - definitely very muffiny, light on chocolate, still pretty good.
carrot cake - didn't rise too well, and weird flavor... may have been my fault
chocolate cream cheese cupcakes - a.ma.zing may actually qualify as muffins, and the cream cheese filling is the BEST. I'd make that stuff just to use it on everything else.

I just made the Chocolate Chip Scones and they are super delicious I followed the recipe exactly, but brushed them with melted 'butter' rather than soymilk because I'm a glutton. Also, I topped them with brown sugar, but not cinnamon. Can't wait to enjoy these tomorrow for breakfast!

AC, your list reminded me of some (half) of the recipes I forgot to review! Hehehe...

hearty cocoa spice muffins - good enough, but could use more chocolate. What's weird is that the inside of these muffins had a red-ish tinge... I have no idea where it came from... the tiny pinch of cayenne?
corn muffins - these were awful =( They tasted really low fat and were spongy. I even added some good corn to them =(
cornbread - better than the corn muffins, but not fantastic. I've been spoiled by the cornbread mix from TJ's... oh well. I think the difference is that this recipe is lower in fat.
zucchini bread - really really good. I had never had zucchini bread before, and this was a treat! It's like carrot cake without all the extra business (nuts/coconut/raisins/etc), and of course the carrots. I think the zucchini really helps it stay moist - it was still just as good almost a week later! Plus, it doesn't taste like zucchini =)
chocolate crinkles - Soft chocolate cookies - so good. The powdered sugar coating makes them prettier but isn't necessary.
pb cookies - Very good. I was worried these would be dry and crumbly (I've had pb cookies do that before), but they were just soft enough and had a rich but not overpowering flavor.
naan - Pretty good. I subbed half whole what flour, and it worked out fine. However, this isn't quite like naan - maybe if I had used a pizza stone, but I don't think so. Good bread, but not quite the real deal. More like a thick, chewy chapati.
soft pretzels - Excellent! Delicious straight out of the oven. Starts to get dry/stale later on in the day, but they're tasty enough that that won't be an issue
cream cheese frosting - pretty good, but the cream cheese filling for the chocolate cream cheese cupcakes is so much better that it overshadows. this one is lighter and a lot sweeter; the other is richer and much more cream cheese.

btw, I didn't do the "mint chip cookie" review - it was "weelittlebuddy"

Ok, I'll add those in a bit.

I corrected that mistake. I think it occurred when I was going back through and changing all of the "faunablues'" to "fb"s.

So, I've been making the Waffles I recipe for about a month now, around once per week.  These have become our preferred go-to waffle thus far.  My boyfriend loves them.  The only change I've made so far is using part whole wheat pastry flour and part unbleached all-purpose flour.  I've been using the flax egg and haven't bothered with the Ener-G.  Thanks for recommending this recipe, Allychristine!

You're welcome, ww!

I made the Irish soda bread last night, and it's pretty meh. It didn't take as long to bake as stated..and it might have even baked too long. The top was getting too done. It did some weird things while baking..and the flavor is like bland cake. It's probably my least favorite recipe from JOVB so far.

zucchini bread - really delicious!  i used cornstarch/water as the egg replacer, and did half oil/half peach applesauce and it turned out perfect.  i will definitely make this a ton.
