The Joy of Vegan Baking

Anyone try this cookbook? Or planning on buying it?

http://www.amazon.com/Joy-Vegan-Baking-Compassionate-Traditional/dp/1592332803/ref=dp_return_1/103-7005927-6356664?ie=UTF8&n=283155&s=books

After VCTOTW and this site, I don't know if I really *need* a new cookbook on desserts... but... well, anyone?

I love the joy of vegan baking, the strawberry cupcakes are to die for and the book has a lot of recipes that are typically left out of other vegan cookbooks, sadly i loaned it to my sister when she said she would try going vegan and i haven't seen it since  :(

I baked the Banana Chocolate Chip Muffins again because they were such a hit before. Sweet, perfectly moist with lovely little muffin domes.

This is a great recipe when you have those super ripe bananas that are almost black.

This time I added an extra half of a banana and an extra half teaspoon of vanilla. Very, very good.

I am so addicted to these muffins - seriously - I now call very ripe bananas "muffin fruit" and my husband will make more every time I bring home or set aside muffin fruit, LOL! We do cut the chocolate chip by 1/2 though because the first time they were almost all chocolate it seemed.  We make these as mini muffins and they are gone so fast between hubby, me and the 3 kids (sheesh, do I have to share?) :)

We recently tried the apple pecan ones sans pecans and they are a new favorite too.

I am planning on trying the lemon poppyseed this weekend.

Here is the link (again) for anyone interested in looking at the JOVB review compilation. It has all of our reviews, in one spot!

The Pumpkin Spice Bread recipe is moist with wonderful hints of cloves, cinnamon and nutmeg. I like that the spices didn't overwhelm the pumpkin flavor. It rose well too.

Easy to make and fat-free, I later realized after reading the top of the page.

I halved the recipe and it made six lovely muffins and one mini-loaf. Just remember to bake for only 30 minutes instead of 55-60 min for the bigger bread loaf. Also, I added 1 teaspoon of vanilla and drizzled the muffin tops with the Maple Glaze (on p. 52), adding a little rum extract to the glaze.

I saw the poor reviews of this recipe earlier. But I would make it again. It makes a delicious  breakfast muffin. Pretty too if you drizzle the muffins with a little glaze.

Oatmeal Raisin Cookies  I followed Jesscitas suggestions and also instead of oat bran i used Bob's Red Mill 10 grain hot ceral mix.  it has oat bran & other grains and it gave them a good crunch.  Very yummy!

Sugar Cookies  I used whole wheat pastry flour, smart balance light, and a cornstarch egg and they turned out perfect when i baked them for around 10 minutes.  Also, to make things easier on myself i rolled the dough out directly onto the parchment paper, cut out my shapes and then pulled away the excess.  that way they didnt get mangled during a transfer.  the spread only a little bit so you can cut them pretty close together.

My mom got me this book for Christmas.  I'm so excited!  Now I have to go back through this thread and read all the reviews.  Joy, joy.....

My sister got me this book!  I made three things:

Gingerbread Scones - everyone really liked these.  They are not too sweet (scones really shouldn't be), and they had a good amount of spices, I think.  I had one for breakfast dipped in soy milk.  :)

Bread Pudding - this one was AWESOME.  My dad ate almost the whole thing.  It was really easy to make, too--just white bread, a banana, soy milk, sugar, spices.  It was really, really good.

Cornbread - My little sister is the cornbread aficionado, and she approved.  However, I thought it was kind of crummy.  Literally.  Dry and crummy.  In the past I've used a vegweb recipe and I think I prefer that.  It wasn't bad though.

Cinnamon Coffee Cake - delicious, very moist and tender.  it would look really pretty with a powdered sugar/soymilk glaze drizzled on it (not that it needs any more sweetness).

I don't know if this has been said already, but I think it's kind of funny that she has a recipe for chocolate milk in this book.  All it is is chocolate syrup and non dairy milk!  :D

You're right. I just looked it up.

I thought it was funny too to find the "recipe" for an All-American burger in Skinny Bitch in the Kitch, essentialy a veggie patty with lettuce, tomato, and condiments on a hamburger bun.

I made the Cornbread today and found it to be good--not fabulous or anything, but then, it's just cornbread.  I must say that it rose beautifully.  I think I would've liked it to be a little moister but mine wasn't crumbly at all.

The best cornbread ever (if you like savory) is in the January 2006 issue of Vegetarian Times:

I always omit the vegan cheese.  Moist and perfect every time.

Thank you. I've been looking for a good cornbread recipe. Is this one a sweet corbread recipe? I like it a little sweet.

I'm making it right now; I'll let you know... however, I'm omitting the onions and cheese. I'm putting it in little muffin cups.  I hope it turns out well.  It smells divine.

eta: Awesome texture, awesome taste. I'd use less salt next time, though. It's not super sweet, but I like the taste. Not dry at all!

THANKS MDV!

MDV said the Veg Times one is savory.  The JOVB one is on the sweet side (I liked it even better today, BTW).

Oh crap!  I meant to say that I use a little less salt.

You're welcome.  :-*

Oops.
I was like, "oooh one whole TABLEspoon?! wow."  But it's still good. I've been eating cornbread throughout the day. :)
Thanks again!

MDV said the Veg Times one is savory.

She's right-- it IS savory.

Meggs, veggydog, mdvegan,

Thank you for your help with the cornbread recipe question. This is very helpful now especially, during this chili bean and cornbread weather. I've got omnis to please so I want to make sure I find the right cornbread recipe. :)

I'm not doubting the deliciousness of mdv's cornbread suggestion (I plan to try it), but this is also a very great one: http://vegweb.com/index.php?topic=5729.0. I didn't really enjoy the JOVB cornbread...it looked pretty, and was all right....but was just too floury and dry.

I have a batch of blackberry sorbet (I couldn't find frozen raspberries) in the freezer.  I won't be able to try it until tomorrow but I'm so looking forward to it and I'll report back  ;)b
