I never really noticed this thread... here are just a smattering of my reviews from the cooking challenge:

Buckwheaties from Choosing Raw
I didn’t really know what to expect but I really like these! Kind of like popped buckwheat. Mine were crispy after dehydrating and worked well with plain milk and berries for breakfast.

Apple Spice Buckwheat Protein Bake from Edible Perspective:
Except I made lots of subs: pumpkin puree for the apple sauce, ground my chia seeds, added 1/2 tsp blackstrap molasses and found I needed an additional 3 tbsp of almond milk to get the proper consistency. It is not very sweet at all, but I liked it with the apple chunks.  I like it, though.. like a dense muffin.

Chana Saag from What Would Cathy Eat?
I absolutely adored the dal palak recipe on my blog and I was curious about trying out this chana saag (Indian Chickpea and Spinach Curry). Because it also has tomatoes, it was not at all like dal palak, but it was tasty in its own right. Subtly spicy with a great mix of flavours. I still find it amazing how much spinach wilts down.

Chana Masala from PPK:
R made this and he was positively smitten. I liked it, too, having searched for a bright and flavourful chana masala. Subbed 28oz canned tomatoes. The tamarind adds a nice tang that works well with the tomato.

Chai-Spiced Cashew Milk Tea - inspired by Choosing Raw
I have never seriously considered making homemade nut milk but decided to give it a go for the challenge! Thank you! I actually made a creamy chai tea: I brewed 1 cup of tea with my favourite chai rooibos, added that with the cashews, date and vanilla for a very glorious creamy tea. Yum!

Butternut Rancheros at PPK
First my modifications: I used a kabocha squash roasted with hazelnut oil. I substituted 2 green chilis for the jalapeno and increased the garlic to 6 cloves.  It was a very simple meal to prepare and tastes very good. A smooth flavourful tomato sauce coats black beans and it contrasts well with the sweet roasted squash.

Vegan Pumpkin Mac 'n Cheeze Sauce from Oh She Glows
I was not as wowed as other commenters. I found it had too much nooch and not enough salt. Would not make it again.

Gingerbread “Cliff” Bars from Peas and Thank You:
I liked these but they were not like any Clif bar I have ever tried. They were soft, cakey and kind of crumbly but full of flavour. I wonder if it is because I used vanilla-flavoured hemp protein powder.. the protein stats were not nearly as impressive with my powder.

Seitan Beats Your Meat

Jalapeño and Roasted Red Pepper Mac N Cheese: Yummy and different. And spicy enough! Would make again.

Wintry, Shroomy Stroganoff:This was a good base recipe, but I needed to add more seasonings. I loved the dill in this.

Killer Glazed Tofu: Fantastic! The sauce is so addictive! I added broccoli to this and could have added more tofu or veggies because it makes quite a lot of sauce (not complaining!). Will try it with seitan next time, I think.

Vegan Carrot Cake Bars with "Cream Cheese" Icing from Peas and Thank You blog--Delicious!  Love the use of pureed carrots (1 full cup) in this, rather than the usual shredded.  With no nuts, raisins, coconut, etc, this makes a great carrot cake for picky eaters.  The cake is sweet, and I think the sugar could be reduced since there is also sweet icing.  The icing is also super tasty.

Oh She Glows Baked donuts

I had to use canola oil instead of EB, but followed the recipe for the larger (6 count) donut pan. It was all extremely easy, and I had the perfect amount of dough. The 12 minutes was also accurate. They were good, but a bit too cakey for donuts. I made a chocolate icing. Overall, too sticky and cake-like. I will try a different recipe.

Brownies

I followed the recipe, but used macadamia nuts instead of walnuts. I do not know what happened, but they were extremely greasy, and would not bake. I kept it in the oven for like 50 minutes, but still had to pour liquid off. They ended up solidifying upon cooling, and did not taste bad, but they were so greasy. Maybe the macadamias?

Creamy avocado pasta

PPK Pesto risotto with roasted zucchini

Mango fried rice
http://www.theppk.com/2012/02/mango-fried-rice/ Good. I used a bit less rice, and let it cook to get a nice crispy bottom. P didn't like the cashews, but I liked it all. A nice ripe mango made it very yummy.

Sunflower mac
http://www.theppk.com/2012/02/sunflower-mac/ Not a huge fan of this one. It was bland, but too oniony. The texture did turn out pretty creamy, but the flavor was not enough. Wouldn't do this again.

Dilly stew with rosemary dumplings
http://www.theppk.com/2011/11/dilly-stew-with-rosemary-dumplings/ Very good and comforting. I thought the rosemary clashed a bit with the dill, so I would either cut that down or do the dumplings plain. Came together quickly, and tasty!

PPK Chocolate Chip Cookies
- These were awesome! I liked how easy it was to throw together. I subbed cornstarch for the tapioca and it worked just fine. I also upped the baking soda to 1 tsp because I like my cookies a little fluffy. My dough was also a bit wet, so I think I used 2 cups flour instead of 1 1/2. This made 16 ginormous cookies for me. So yummy, I can't stop eating them.

- I skipped the slaw, because I'm lazy. I stuck pretty closely to the burger recipe. I just left out the sweet potato and upped the cilantro to 1/4 cup, because I didn't want to waste any. These were SO delicious. Even the omni-man was impressed. I was also pleasantly surprised that they didn't crumble, that always happens when I make veggie burgers.  Next time I will make the slaw, because it will probably make these over the top amazing.

Soy Curl Fajitas (http://elizaveganpage.blogspot.se/2010/11/soy-curl-fajitas.html): Absolutely delicious! I used seitan instead of soy curls (will try soy curls next time!) and therefore omitted the vegetable broth in the marinade. The marinade was so great! I left the seitan marinating for maybe three hours or so and it was very flavorful (I used chicken style seitan from Vegan Diner). I left out the green bell pepper too because I don't like it much, and instead added some mushrooms. I really recommend this recipe! So good with avocado and salsa in flour tortillas!

Big fat "Turkey" Tetrazzini (http://elizaveganpage.blogspot.se/search?q=tetrazzini): Very good and very creamy! I can't say if it tastes like turkey because I've never had it, but I thought it tasted a lot like chicken at least. Or some kind of poultry, whatever, it was great! I upped the herbs in the soy curl marinade a bit but I don't think that would have been necessary. I didn't use any bread crumbs on top because I'm not really used to it and I didn't feel like it was worth the extra effort. Don't think I missed out!

Bittersweet blog lemon mint cooler cookies

I don't know that I would make them again, since I only got 12 cookies out of it, and used 1/2 cup EB. She says the dough will be very dry, and it was..I had to use my hands to form into a ball. Tasty, but eh.

Oh She Glows Basic hummus

This was like French bread, and was not just another bread in French bread shape. Great texture, taste, and smell. The method is great, and I'd go back to this recipe.

Perfect sandwich bread

In a rare step away from my many cookbooks I used the blog "Show Me The Curry"....it's a great website because they also show videos.  I used it to make some tindora, a veggie I picked up at the Indian market and wanted to try,  and I appreciated the video that showed how to cut it, and prepare it.  This was quite good.

Surrealistic Bean and Veggie Enchiladas (http://elizaveganpage.blogspot.se/2010/01/surrealistic-bean-and-veggie-enchiladas.html): Thumbs up! Definitely the best enchiladas I've made. The sauce alone was outstanding, I could have eaten it as soup. It will be my go-to enchilada sauce from now on! Made some changes though based on what I had at home: Different veggies ratio, skipped the chili oil and upped the cayenne instead, used some chicken style seitan instead of the kidney beans (but next time I'd go all beans!) , used ketchup + smoked paprika for the bbq sauce and half "chicken" broth/half veggie broth. I used frozen spinach, made my own refried beans and regular crushed tomatoes instead of fire-roasted. Didn't have any cheese so I went with the nutritional yeast. I loved the use of nutmeg and cinnamon in the filling, It really kicked it up a notch!
