Best Tasting Pancakes Ever! Vegan or Otherwise

What you need: 

1 teaspoon vanilla
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup nondairy milk (I use soy)
2 tablespoons vegetable oil
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar

What you do: 

1. Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl.
2. Pour wet ingredients into dry; mix well until smooth consistency.
3. Drop ladlesful onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.'

SO HOW'D IT GO?

This was super yummy. The only thing I did was add strawberries and bananas into the batter and topped it with blueberry syrup.....sooooo good

Thanks for the recipe.  Such good pancakes.  I used Ener G egg replacer.  I subbed applesauce for the oil, and used half whole wheat flour.  Also good with blueberries in them.

I've made these 100 times and they are so great :) I use Ener-G egg replacer and they turn out great every time.

Not that this recipe needs another review but we loved it! I tripled it and used a whole banana for each egg so they were kind of like banana pancakes but that was a good thing. I was cooking for about 15 people over half of which were kids and everyone raved. Thanks so much. Since being vegan pancakes has been something that I have had the hardest time getting to work out.

amazingly fluffy and tasty pancakes! my boyfriend was amazed. we used applesauce in place of oil, a whole banana as egg replacer, brown sugar and a tablespoon of extra flour because the orignal batter was really liquidy.
we didn't have vanilla but cinnamon was great as a little addition, and we put blueberries in the batter too!
we'll definitely make these again! :)

This has become my standard pancake recipe. Easy to make and delicious. Super fluffy and they taste good plain or with toppings.  :)>>>

I CONCUR! used sunflower oil, agave nectar, and egg replacer. these cook fast to my delight! and added a wee bit more flour to compensate for the extra 3 T of liquid from the nectar.  :w00t!:

I had never made pancakes before, vegan or otherwise, but these were great! My first pancake sucked but I'd cracked it by the end.
I added a teaspoon and a half of mixed spice, some currants and almond extract, what can I say, good pancakes! Very easy and quick, had mine with date syrup and raspberries.
I will try replacing the oil with some concentrated apple juice preserve I have, and report back.

These had a good taste, but came out "flatter than a pancake".  More like the consistancy of a crepe?  I am not sure what happened, as I followed the directions exactly.  Possibly, I did not mix my egg replacer enough?  We still ate them though, and they were still tasty.

I will try them again, next time I'll try to mix the egg replacer better.  Hopefully they turn out fluffier? :-\
