Blackened Tofu Caesar Salad

What you need: 

[u]Croutons[/u]:
6 slices wheat bread, cut up into crouton like squares
2 teaspoons nutritional yeast powder
3 teaspoons garlic powder [u]Caesar Dressing[/u]:
1 cup low fat soy milk
1/4 cup lemon juice
6 tablespoons apple cider vinegar
2 tablespoons soy sauce
1-1/2 cloves garlic
1/2 teaspoon ground mustard [u]Blackened Tofu[/u]:
1 cup oil
3 tablespoons onion powder
3 tablespoons garlic powder
2 tablespoons cayenne pepper
1/2 teaspoon salt
1 (12-ounce) package extra firm tofu, cut into 1" slabs, then into triangles [u]Salad[/u]:
4 heads romaine lettuce, chopped
grape tomatoes, to taste
chopped carrots, to taste
black pepper, to taste

What you do: 

1. Croutons: Sprinkle both sides a bread cubes with nutritional yeast and garlic powder. Bake in oven at 350 degree F for 25 minutes.
2. Caesar Dressing: Place all dressing ingredients in a blender; blend on high to liquefy. Set aside.
3. Blackened Tofu: Place oil in a shallow dish. In another shallow dish, combine onion powder, garlic powder, cayenne pepper, and salt. Dip tofu slabs into oil, then into seasonings. Heat a frying pan until hot over high heat, then place tofu slabs in pan and cook until blackened, about 5 minutes on each side. (Now, if you don't use a hot iron skillet then you will have to deal with massive amounts of smoke, like I did.)
4. Salad: Place salad ingredients in a bowl; toss to combine. Layer with blackened tofu, caesar dressing, then croutons. Sprinkle with a little black pepper.
I used The Uncheese Cookbook p.161 and switched stuff around a bit - wanted to give credit for a few things.

can smeone please tell me what " ground mustard-end dressing" is????

ground mustard powder

that's the last ingredient to go in the dressing.

i thought this was great! the dressing was way too vinegary for me so i had to add a lot more soymilk and then i just put some flour in to thicken it. goooooddd... i always need some interesting twist to get me to eat my salad :)

The tofu on this salad looks really great.  I need some new tofu recipes.

The blackened tofu recipe and the crouton recipe are what I used for my salad. I liked the tofu seasonings, although I think it needed a little salt. Also, I made 2 pounds of tofu and only needed the amount of seasonings for 1 pound. I don't really know where all the oil comes in, although I did use quite a bit (1/4 cup or so) to cook the tofu so the seasonings didn't stick to the pan.

The croutons were so easy and delicious. I used a loaf of homemade wheat bread and didn't measure--just sprinkled some NY and garlic powder on. I tried a different Caesar dressing recipe, but this salad is still a great idea! We also added sliced red onions, and I would've added avocado if I hadn't used it all in guac.

i am eating this as we speak...er, type...

it's quite good but i would definitely make a few changes. i added some arrowroot to the dressing to thicken it up a bit...it is a bit tart so i'd omit some of the vinegar, because i'm more partial to a creamy dressing, especially when the tofu is so spicy... next time i also might add a roasted garlic clove or two to the dressing, instead of raw garlic, which is sort of cloying and annoyingly obtrusive at the moment. might also be due to the fact that i added a huuuuuge clove. ;)

the tofu is just hot. it doesn't really have a lot of flavour. i'd probably omit the cayenne by half...and maybe use sea salt next time - this time i used herbamare instead...don't think it was enough salt to bring the garlic and onion flavours forth. i also used coconut oil instead of olive or canola or whatever.

the croutons are delightful! i was a bit skeptical about making the garlic and nutritional yeast stick without water or oil or anything, but it's true! you just have to sprinkle it on, and it sticks, and makes yummy croutons. delicious.

so, i used baby romaine, topped with the blackened tofu, sliced carrots and cucumber, topped with the croutons and then drizzled with the dressing.  this recipe as is is a great standpoint to work from, and could definitely be worthy of five stars with a little tweaking.
