Easy Crunchy Holiday Quinoa

What you need: 

1 cup quinoa
1/2 cup raw sunflower seeds
3/4 cup roasted red pepper hummus (tribe is my fave brand)
1 clove garlic- minced
1 red pepper- diced
1 green pepper- diced
dash of salt & pepper

What you do: 

rinse quinoa and put in a small pot w/ 2 cups filtered h2o. bring to a boil and then simmer on low for 10-12 minutes. Add minced garlic clove and stir occasionally. When quinoa is done, add the remaining ingredients and stir well. easy!
This can be used for stuffing other veggies to bake in the oven or eaten straight out of the pan.
(I cannot consume too much soy so this is a great way to get a lot of protein!)

SO HOW'D IT GO?

My fam just tried this tonight but used pine nuts instead of sunflower seeds. It was SUPER yummy!    I fell away from using quinoa when I couldn't seem to eat a plate w/o little pebbles or something in it but thought we'd try it again tonight with the box of Inca I had. My hubby said that it was so much easier to eat than regular quinoa because he always felt like he had to choke down grit  ::) so this is a  ;)b in our book! Oh and I also put it in a tortilla for more of wrap which is what my dh and boys are used to.
