Nice Banana Cake

What you need: 

1 1/2 cup of white flour
1 1/2 cup whole meal flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 cups soy milk
2 cups brown sugar
6 slightly overripe, large mashed bananas
1/4 cup sunflower oil
1 cup chopped dates
1 cup chopped walnuts
1/2 teaspoon sea salt
2 tablespoons egg substitute
2 teaspoon vanilla essence
1 teaspoon cinnamon

What you do: 

Sift flours into large bowl and add baking powder and soda. Make a hole.
Mash bananas in another bowl and add sugar, vanilla, cinnamon, salt and oil.
Prepare egg replacer and chop dates and walnuts.
Pour banana mixture into the flours and blend in. Then add egg replacer, nuts and dates and pour into oiled and floured large tin or 2 loaf tins.
Bake at 250 cup for an hour. (This cake cooks in about 1 1/2 hours in my slow oven on high!). See how you go...
The perfect combination of flavours makes this cake just one of the nicest ones I have ever tasted! Heavenly...

SO HOW'D IT GO?

This was a pretty good recipe. I actually only had 5 bananas instead of six and used white sugar instead of brown sugar (was all out) and I think it turned out great regardless. I love to make banana bread and this was just great! I think the temp worked out just fine, I didn't have to turn it down or anything and an hour and a half was perfect for me.  :)

8) made this yesturday.
I only used half the sugar cos I thought it would be sweet enough with the bananas and dates, and I sprinkled a layer of chocolate chips on the top before baking to make it extra-special. ;D
The end result was a lovely sweet moist cake - will be making this again for sure :)

So I would recommend taking the time to just let the cake cook for longer.  I put my oven on 250 c and thankfully checked it 15 minutes later as it had cooked super fast on the outside, turned it down to 180 just in time as it would have burnt to a crisp within another 5 minutes  :o.

The outside was a little tough but I think that's cause of the above, apart from that it tasted pretty good though, everyone at work liked it.  Best banana cake recipe I've tried so far and will be making it again (at a lower temperature).
