Toasted almond pesto

What you need: 

1/3 cup slivered almonds, lightly toasted
3 large cloves garlic, peeled
juice of 1/2 lemon
3 cups fresh basil
1 tablespoon sesame seeds
1/3 to 1/2 cup olive oil
freshly ground pepper
1/2 teaspoon salt

What you do: 

This is a runnier style pesto, but feel free to adjust consistency to your liking.
1. Toast almond slivers in (toaster) oven for about a minute, until lightly browned.
2. Add garlic and almonds to food processor and process until finely chopped.
3. Add lemon juice and sesame seeds. Process until minced, scraping down the sides.
4. Add basil, and process to chop.
5. Add olive oil, salt, and pepper, and process until consistency is slightly runnier than a paste.
6. Adjust for seasoning.
Spread on bread, eat with pasta, or roasted veggies.

SO HOW'D IT GO?

Wow this was really good. I've never tried almonds before but used them tonite.  I didn't toast mine, used a bit less oil, added nutritional yeast and sea salt and it turned out great.

Really great! I used walnuts instead and left out the sesame seeds. so much cheaper than pine nuts!

When I was an omnivore a few years ago I ate some store bought pesto that was OK, with some chicken that was kinda gross...ever since then I just never wanted to eat pesto it just put me off...but this picture looked so yummy, and any new thing to put on bread, Im there.  Made this today, but I didnt have three cups of basil, so I used what I had, like 2.  It was sooo yummy, I ate it for lunch with some bread, and now Im eating it on pasta.  Definitally going to make this next time more like the recipe, I juts threw everything into the blender and added the oil while it processed.  Thanks!
