Vegan Baked Macaroni & Cheese

What you need: 

2 cups elbow macaroni
1/2 cup olive oil
1/4 cup flour
3/4 cup nutritional yeast
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 tablespoon tamari
pinch of salt (to taste)
pinch of black pepper (to taste)
1 3/4 cups boiling water
3/4 cup Japanese panko bread crumbs

What you do: 

Cook the elbow macaroni according to its directions. Drain and rinse well. set aside.
Make a roux by whisking together the flour and 1/4 cup of olive oil in a sauce pan over low-medium heat. When the roux is thick, add the 1 3/4 cups boiling water, spices, tamari, and nutritional yeast. Whisk well, and when the mixture is thoroughly mixed, add the remaining 1/4 cup of olive oil (or to desired consistency). Give it a taste, and add salt or pepper accordingly.
Mix the pasta and ‘vegan cheese’ sauce in a casserole dish and top with panko bread crumbs. Bake in oven for about 15-20 minutes at 350 degrees.

wow this is pretty good! I accidentally left out the second 1/4 c of oil and did not use any salt, but it still came out well. Can't image how much better it'd be if i dont forget anything..will try again!!

The bread crumbs were also an amazing touch! and i felt like i was getting a good cheese fix.


When I first tried this I wasn't crazy about it-consistency is perfect but it just didn't taste quite right. But it was pretty good as a leftover with BBQ sauce and salt added.


i had to use significantly more than 1 and 3/4 cups of water to get this into a saucy consistency. when i finished with the directions on the recipe, i had a super thick blob of sauce that i could barely stir. i added probably close to another cup of water to get it to a pretty thick saucy consistency. don't know if that was an error on my part or what.



this is completely taking care of my macaroni and cheese craving and my cats are very happy with it, too :)

modifications i did: no tamari and no bread crumbs or whatever that stuff was, but also i didn't add all the olive oil (i instead used half and feel that there is plenty of olive oil taste to it.) i think i went a little light on the water amount, too, because i was wanting a thicker sauce.

all in all, excellent and i will make it again (with all the ingredients someday)



This is great, I added dried mustard, tumeric (pinch each) and used 1 cup soymilk (boiled first) with 3/4 cup H2O.  I also subbed soy sauce for tamari.  I love pasta and have a gazillion vegan pasta recipes-but this one is a favorite.  I also topped it with green onion.  This does taste a lot like rarebit as I recall as well.


Awesome! I made it almost exactly, except no tamari or onion powder, and I added frozen peas. I tried another mac and cheese recipe on this website, and it had a weird consistency. This one was perfect. I'll be making this all the time now.


this was delicious!

however, i tweaked a few things and liked the taste of it a lot more once i did.
i made it all exactly the way you said (except used a little less of the olive oil), and then tweaked the flavor by adding a squirt of yellow mustard, a teaspoon of white miso, and a little red pepper. this really affected the cheesy flavor in a positive way.

it was so delicious in the end! very creamy and cheezy.
