I remember making this salad in elementary school. Its mostly carrots and raisins, but there was soemthing else in it to. I think it was yogert, but maybe it was something else...has anyone ever heard of this salad? I also think I would add walnuts to mine...Trying to coem up with easter side dishes to suit me and the omni family! Thanks!

carrot salad?

Is what you're thinking of shredded carrot, some raisins, mayo, and a squirt of lemon?

Waldorf salad? With a creamy dressing, walnuts, and raisins?

waldorf salad = apples, walnuts, celery, raisins, and mayo...  at least that is how I have always known it.  When my husband described a salad we'd been making to a co-worker - baby greens, dried cranberries, blue cheese, walnuts, and raspberry vinegerette, the co-worker said, "Oh, waldorf salad!"

I think different people have different ideas about this?  :-)

I think the carrot raisin thing has a mayo or other type creamy dressing ...  would be carrots, raisins, and mayo.  Maybe some walnuts?  Carrot slaw, carrot raisin salad, could be called a lot of things like that.  Yogurt might work...  I am thinking it is more commonly mayo or something like miracle whip.  (I've never actually tasted this salad but assumed it was a cousin of cole slaw, hence a similar dressing)

Okay my grandma had a recipe for a salad like this and I think it is yogurt, but lemon flavored...
it doesn't sound too appealing to me... but I'm not a yogurt fan I guess. ;)

It really depends on who made it and where they lived. In the school system, it was cheap mayo (the kind known as "salad dressing" but came in a widemouth gallon jar like mayo); in someone's home it may well have been yogurt. Make a little serving both ways and see which you like better.
Carrots and raisins would go well with a ranch type dressing, you might consider that.

I loved carrot salad as a kid.  :) My mother made it with mayo (this was a loooooonnnnngggg time ago--yogurt was not common). It's also a popular cafeteria salad.

thanks guys, I guess I'll try both. Though I must admit that vegan mayo seems a little scarey. Ive heard good things about it, but we shall see...I saw tehy carry it at a store here in town...

this salad is so easy, i make it all of the time!

if you have a food processor, just put in the coarse shredder blade, shred 3-4 carrots, and shred an apple.  the ratio should be about twice as much carrot as apple.  then, just add raisins and a little mayo (or vegannaise or nayonnaise) until you get the sauciness that you want.  and that is it.  walnuts could make a nice touch, i guess, but i don't ever put them in.

i call it carrot raisin salad.

Yup, the original is mayo (my grandmother always added a little sugar to the mayo - but then, she was a big fan of sugar - I always said it was the "preservative" that made her live to 90 ;))

More "health-conscious" people made it with yogurt.

If you're a tofu fan, you could make a creamy substitute with blended silken tofu with a little sweetener, oil, lemon juice a salt (a dash of each) for a good lower-fat, creamy dressing.

I recommend Veganaise over any other brand. Nayonaise and Spectrum brands are a little gross to me.

Indeed, you could make up the actual salad and try a little bit with vegan mayo and another bit with yogurt, and maybe even a bit with a combination of the two. Let us know what you come up with.

Mayo. Vegenaise is the best.

it's usually mayo, but like in many recipes that call for mayo or sour cream, you can use yogurt instead as a healthy alternative.

i know exactly what you're talking about!

happy cooking!
